Sudo, the soders group have permission granted to do supersuser task.
Such as the owner give you to make his house as yours, but you’re responsibile for it if any happen, such as, logs are stored on who has use the sudo.
You may remove the user from being sudo in sudoers configuration.
For SU, you control the system as Superuser, not as standard user who has elevated previleged, because SU its the OS itself .. sudoers only granted user by SU ..

Su switch to riot user
Su switch to different user
Su- switch to riot user but doesn’t inherit the env of normal user.
Sudo switch to riot user only for that command.
