    Wow...This is Great. I have always been intimidated by fermenting...I've always thought you had to make large batches for it to work right. This Kit will let me do it is small batches. Great! Thanks Jack...

    Jack, have you heard of wooden tops to cover the fermenting food, instead of glass? Someone gave us one to use for pickling cucumbers with garlic, salt, and peppercorns, many years ago in the sixties. I have no idea what happened to it, but it brings back memories. Long story. Very nostalgic. Boo Hoooo. Hubby is gone now and I have empty nest syndrome.

      The glass one chip and the glass gets in the food. Go to Amazon some people claim that.

    Thanks, Jack. This looks like a good way to get started. I have a question - do fermented foods have an expiration date after you put them in the refrigerator? I have some mason jars with pickles that have been there for at least a year, as I never throw them away, but don't eat them often.

      Nope! They are preserved! Much better than with vinegar and chemicals. Year old ferments are not a problem. They might get a little mushy or too sour, but always edible and nutritious.

    What's the purpose of weighting it down if the seal tight lids keep the outside air out and also vent out any trapped air inside the jar? Why waste that space in the jar with an unnecessary weight when it could be filled with more vegetables? .. If it's filled all the way to the top with water will it leak out the sides?

      Yes it will leak due to co2 expansion and salt will pull more water out of the veggies adding to the existing brine

    Hi there, do the metal rings around the product go rusty with time? It's the one thing making me hesitant to pull the trigger and buy it. It's a nice concept and it seems to work, but I'm afraid of potential rusting.

      Marcello Capone they are ball jar rings and they don't even come with the set they come with the jars. No they won't rust unless you soak them in water for weeks at a time. Not to mention a box of like 24 is a few dollars. I mean they are canning rings.

      I ended up doing some more digging and eventually found out the ring/lids didn't come with the product but the doubt remained; so thanks for clearing that up.
      Now I'm on the hunting to find suitable wide mouth mason jars. In the UK there doesn't seem to be many available. 'Ball' name-brand jars fit the Masontop lips but apparently the glass is square shaped and I wanted round, 1 litre jars.
      Oh well, I'll do some more research and find me some.

      try your local hardware store (got mine at local Ace Hardware) also sometimes grocery stores carry them, can be ordered online but I would think shipping would be expensive

      I know this was posted a year ago, but in case anyone else comes along who wonders, you can get canning jars at Walmart, Walmart.com, Amazon, Tractor Supply, hardware stores, and many grocery stores.
