    That's similar to how we cook deer tenderloin in the southern states of the U.S. I use buttermilk and a second coating of flour instead of breadcrumbs. Our seasoning goes into the flour though. Usually a seasoned salt/creole seasoning, garlic powder, onion powder, and black pepper.

    Make the schnitzel a little smaller, you have to move the pan the hole time for better crust, greetings from Austria

    As an Austrian-Dude... Here comes my Foodrebellion:
    The Dish "Wiener Backhendl" is much older (1719 and older) than Radetzky and it get´s produced nearly as same as Wiener Schnitzel.A visit on Wiki helps...
    I hope I will see next time the Wiener Backhendl on your channel... :D

    A kind of Schnitzel is from Milano . It's called colleta ala milanese. It's thicker than most other Shnitzel and believed to be the first "prototype" of Schnitzel.

      @@extention774 thats not the only difference, for taste and feeling its much more important that the cotoletta(meat) is a few times as thick as the wiener schnitzel which has meat as thin as a leaf..

    Very similar to what we call Chicken Fried Steak in the Southern US. We use tenderized round steak, salt & pepper , eggs wash, & flour. And we cover it in cream gravy on the plate. Sides: Mashed potatoes & biscuits.

      Well here's a question to you, chef! I saw the first thing he did here was to cut the veal parallel to the muscles rather than against the grain. I always knew this was a basic meat cutting mistake. Is there something I am missing here?

    I love Wiener Schnitzels. Great recipe to follow. Wiener Schnitzel sold under the name of veal cutlets used to be sort of common in American diners. They went out of fashion. They are still being served at Italian restaurants as Veal Milanesa, which explains the Italian origin. In American diners, the beef version is more common, called chicken fried steak, or country fried steak,
    covered with white gravy. .

    Fascinating.
    Every cookbook I ever read that a "Wiener Schnitzel" is veal.
    We in Germany especially love the "Schnitzel wiener Art" which is much more commonly found in restaurants and cheaper of course being pork meat.
    PS.: One can buy "Semmelbrösel" ready in most supermarkets...

      The original recipe IS veal. I live in Vienna and pork schnitzel is more common because it's cheaper but the OG recipe is with veal.

    Can't help but think bigger trays on the breading station and a larger pan for the butter would've been a good idea, Pitmaster.

    As a Viennese I am a harsh Schnitzel critic and it seems you did very well! Thumb up. Secret hint, you know what my grandma did? She fried it in pork lard. Is that healthy? BUT IT IS SO GOOD!

      Yes pork lard is healthy. So is tallow and so is clarified butter. Using seed oils is not healthy, those are very bad for you.

    The origin of the Wiener Schnitzel is a mystery. A couple of years ago I went to restaurant Borchardt in Berlin. Fancy place with history and global stars dropping by. The Wiener Schnitzel isn’t on their menu anymore, but people claim they invented it. Story is that a Austrian Kayser from Vienna was a regular whenever he visited Berlin. This man didn’t had a wide arrange of food he liked. Based on his preferences the Chef came up with what we now know as the Wiener Schnitzel. It became so popular that right now it’s world heritage.
    Over the years it became more popular to make the biggest Wiener Schnitzel. The biggest a know of are served at “Frans op ‘n Bult”, located next to the A1 highway in the Netherlands, quit close to the German border. It’s a really big and popular Truckstop. If one can eat their biggest Schnitzel in a certain amount of time you get a notion on their Wall of Glory and probably a T-shirt. A must for competition eaters…

    I think we do this 2 times a week for our children. And we are from Austria !!! And it comes from Austria. The former Empiror ate it at Venice and it had the shape from Austria. So he took the recipe to vienna. Greetings from Graz. 😉

    Schnitzel is the origin of the Chicken fried steak we love here in Texas. We do make it a little different , usually not veal or with breadcrumbs but then we kick it up a notch with a fantastic cream gravy served on top. You need to try it like that.

    Nothing wrong with small ones, when there is more of them. The coating is very tasty as well. So much that not only my country but also others coat cheese like that and fry it. I ate so many times of schnitzels and can cook them. Today for example, I have minced beef mixed with cheese and onions coated in breadcrumbs as a lunch.

    We have something very close in the U.S. Called Country or Chicken Fried Steak severed at Breakfast with Eggs.. Or other meals with Mashed Potatoes and Milk Gravy on both the meat and potatoes. Don't think it's Veal though. That might make it better... Usually not that big. But some places like TEXAZ in Phoenix Az serves one about that size.

    I went to Berlin as a child and I bought a snitzel sandwich from a shop. It was one of the best things I’ve ever eaten.

    I make them a lot, so much better than store-bought. Usually I use pork, spice up the breadcrumbs with chilipepper and little bit of paprika powder and put the salt in there as well. That gives it a KFC effect not original but really good.
    With a meathammer you can even flatten a 3cm thick meat till its snitsel.
    In the Netherlands you just can't buy good snitsel in the supermarkets, even the meat is sometimes hard to find.

    Are you sure about the Venice part? In Italy the first breaded, pan-fried veal is commonly considered the Colotella alla milanese, from Milan, which is somewhat dated back to XII sec.

      I believe that much of this belief is hard to originate as many food cultures have similar dishes. One could easily say that chicken fried steak is the same thing as schnitzel in the US although southern states will claim is as their own creation by calling it southern fried steak. The only thing for certain is that Wiener Schnitzel is the dish that originated in Wien Austria. Not the same as the first to originate it. I think Roel has unintentionally misled some beliefs.

    There are a lot of places in germany where you get small schnitzels, often made from Pork. Really comes down to the quality of the place where you order it and the region.

      But the origins of pizza aren't in Greece? Pizza is a spcific dish invented in Naples. If you want to call every flatbread with cheese on top "pizza" then its origins are in the Middle East anyways.

    I made schnitzels last night! They were excellent. I served them with fries. I'll do your potato "salad" :D next time! HOT TIP: If you get the corn flakes with no suger in them you can blitz them in a food processor and they make GREAT "breading".

    If you want it extra-crispy, you can go flour - egg - breadcrums - egg - breadcrums. Viennese dude here....and about the origin topic. Just like Burgerking says: Just because you invented it, doesn't mean you brought it to perfection. Just like Italians taking credits for inventing Spaghetti. Comming from China, brought to perfection by our italian friends! About the size of the Schnitzel - for me it's like with pies. The best part is the crust on the outside. So the smaller the Schnitzel, the more crispy outer-crust you get. Just eat many small Schnitzels...

      Most Italians don't claim we invented pasta. Pasta in Italy is from the Middle East where Arabs invented it. Chinese invented it independently.

    Crazy. I always thought a weiner schnitzel was a sausage because there’s a fast food chain here in the US called Weinerschnitzel that specializes in hot dogs.

      @@mogarcia9755 Not true. Wiener means that it is the Austrian style of schnitzel and if you didn't know, Vienna is actually called Wien in German. The schnitzel was originally made only from veal but was popularly adapted to pork cuts as pork is much cheaper than veal and as such more practical for the typical family to afford. Schweineschnitzel is what pork schnitzel is called in Germany. Hope this clarifies your understanding of what the dish actually means.

      My grand mother made it. She was from What was Germany At the time but later became part of France. She served it with Gravy and Fried potatoes.

      We basicly took the schnitzel and substituted the type of meat to pork loin that was cheeper and more abundant in Poland. A lot of the taste comes from the type of fat you use to fry it. That's why his clarified butter usage tastes good.

    Pro Schnitzel tip:
    When having spend the holiday in Austria winter or summer, you never
    AND I MEAN DEFINATELY NEVER EVER !!!! - make the dumb mistake of ordering a schnitzel on your way back at a Van der Valk restaurant in the Netherlands. It really is the biggest debbie downer to the end of a great holiday.

    You have to cut them agianst the grain from top to bottem

    Schnitzel "Wiener Art" with pork though is the best! veal for me never really delivers. make a video where you do topround from beef, pork and veal + loin schnitzel from all 3 and see what you like best!

    The sad truth is, you will not get the real Wiener Schnitzel in 99% of German or Austrian restaurants, only in the very top, expensive ones.
    90% will be some cheap pork and 99% will fry the Schnitzel in some cheap vegetable oil like sunflower or rapeseed oil.
    If you want the real deal, you have to make it yourself or pay 50 EUR.

    But attention, if you order a Wiener Schnitzel in Germany you get just a Schnitzel Wiener Art with the wrong meat.
    I personally prefer Panko instead of Semmelbrösel, but traditional is breadcrumbs.

      That's because you fry the chicken like a schnitzel. If it works use it. Poland changed the meat from veal to pork.

    Use eggwhites instead of whole eggs. Makes the crust more fluffy but still crusty
