some details reg demo of and proportion of salt to marinate kadarangai; fenugreek powder is from roasted or raw grains etc. would be helpful for beginners please

As hygiene part is important I feel to add that daily before kulukkal of pickle bath has to be finished for long lasting quality of all pickles and avoid opening the main pickle container during night time which advise I got from elderly ladies of my family..

Maam my patti used to make this with green chillies.It would be so tasty and in those days there were no fridges i dont know how it would be so well preserved.Do we need to cook green chillies in oil?.Please teach me maam.

Why sometimes, pickles especially kidarangai and lemon, turn bitter? How to avoid this?
W.r.t. Sai Jayashree,
Especially for kidarangai, before cutting it, you can put the full kidarangai(s) in hot water for 10 or 15 minutes and covering the vessel containing the water by a lid (by boiling the water and after turning off the gas stove and also see that all parts of kadarangai is immersed in the hot water by rotating it)
It is preferable not to add/mix the salt/powders in the kadai when it is on/over the stove. You can remove the kadai from the stove and then you can do it.
Adding more than the required quantity of the fenugreek powder also could be a reason for the bitterness.
The number of days for the marinating could be doubled or trebled so that the skin of the fruit is further softened.
Please ensure that seeds (if any) are completely removed at the start of the pickling work
All the above (or some of it) may be applicable to Lemons also.
