I think we usually don’t eat eggplant skin if there is 烤茄子(grilled eggplant).
I love Erin.She has an infectious smile.
The version from hong kong is typically served in a claypot and its not meant to be too saucy because the pot is so hot it is meant to evaporate some of the sauce when it goes in after cooking in the wok first. It creates a sort of caramelisation of the sauce. Also it is made with minced pork, salted fish, chinese bean sauce it is an umani packed dish usually quite salty best eaten with rice.
Ohhhhh ok! Hmm is 鱼香茄子煲 basically just hong kong style 鱼香茄子? or is there a sichuan variety also served in a claypot?
@@BlondieinChina It should be judging from the name. The Sichuan variety (the original variety actually since 鱼香 style dishes originated from Sichuan) is not served in a claypot. The HK style may add some dried seafood and seafood-based sauces like hoisin sauce, which is not present in Sichuan style despite the name.
@@BlondieinChina I don't think I have ever seen a sichuan version served in a claypot and as far a I know it is not common either.
In Hong Kong, 魚香茄子煲and魚香茄子are basically the same thing, one is served with a claypot and one isn't. The one served with a claypot is common in 大排檔 (open-air food stall) in order to keep the dish warm especially in winter. Hong Kong style 魚香茄子 is different from other types because it really made with salted fish.

Every westerner I know in my life loves Chinese eggplant dishes.
“鱼香茄子” is the type that what we so call "Fish flavour but without fish" sort of flavour in China, like "鱼香肉丝“, Fish flavour pork slices, like you mentioned in the video, "鱼香” is the kind of flavour that includes sweetness, sour, savoury and a bit spicyness. But when it comes to “咸鱼茄子煲”,which is the canton style, it uses salt marinated dried fish to reinforce the flavour of the eggplant, a lot of people really like the strong taste of the dried fish but some people just thought it might be too strong from the fish, oh btw, next time you can try the “金沙茄子” from “石锅先生”, they are really good, located in Burwood and Chatswood.

The Cantonese style 鱼香茄子煲 uses Preserved salty Mackerel Fish that comes in Jar. Just like Tuna in a Can.

I've been watching your videos all afternoon but for some reason this vid hit me so hard with nostalgia. I'm half Chinese (grew up in Shenzhen but with Guangzhou heritage) and Australian (Melb) and watching you explore Chinese culture at a depth I was never able to as a child is incredible. You're slowly lifting the veil over my eyes and I'm realizing now how much I never knew about my own culture. I was hit with a wave of longing to return to China and relearn everything. I'm from East North China. If you go to the farmer's market in the summer and fall, there are many kinds of eggplants, with all the shapes, colors, and tastes. We used to eat them raw :-)
Blondie, come to California to the LA County area. We have huge cities with a majority of Chinese: Rowland Heights, Monterey Park, Arcadia, San Gabriel Valley, Irvine, and more! We also have the largest Vietnamese community in Orange County outside of Vietnam and Houston, TX.

So the 鱼香茄子 (yú xiāng qié zi) is interesting. 鱼香(yú xiāng) is a type of flavour in Sichuan cuisine. It is the type of flavour that are traditionally associate with fish dish as Amy said and hence the name. When it is make with aubergines, fish is not required or forbidden.
The Hong Kong style one is a bit different, it is also called 梅香茄子 (méi xiāng qié zi). 梅香(méi xiāng) is short for 梅香咸鱼(méi xiāng xián yú), it is a type of salted and cured fish originated from Guangdong Province. During the preservation process the fish also fermented which gives the final product an unique flavour and a soft and flake-y texture. Adding this preserved fish to the dish gives the dish an extra layer of flavours.

A little bit extra notes for the 2nd dish. The reason why it called "Fish flavour eggplant" is because Sichuan is lack of real fish. When you see the geograhy of Sichuan, you will see that it doesn't have much rivers or lakes, and it's far from the sea. So people from Sichuan creat the way to make other dishes taste like fish. You can find many this types of dishes in Sichuan dish. BTW, Erin is so cute.
@冉冉 I didn't disagree that there are many types of plain water fish in Sichuan. However, since Sichuan has a large population under poverty in old times. Fish is still not a typical general food choice for most people living in Sichuan. You can't deny that "Fish flavor" food is only invented in Sichuan dishes.

In the US, many Chinese restaurants call "fish fragrance" eggplant "eggplant with garlic sauce". I guess that would avoid confusion. Even if they are not completely plant-based, we could always request them to hold the meat/fish/dried shrimp. I wonder what type of eggplant they use in Australia. They look big. We use the smaller Asian eggplants around here.
