No worries at all, I think that depends on what you want the audience to focus on, if you’re focused on the bike, then definitely the bike, but if you’re focused on the person then definitely face detection.
I do PAL mainly cause of where I live, so it matters depending on where you live and the lights you have or use. In Indonesia lights tend to be 50Hz, so using PAL makes sense over NTSC.

when shooting video in custom mode set to photo, are you able to set the shutter speed?
