Okay. I just made your cranberry sauce, and hands down, it’s the best cranberry sauce I’ve ever had! Thank you for sharing this wonderful recipe. I used Cabernet Sauvignon for the dry red wine ingredient.
Kevin, you can soften the leeks into good quality oil and a pinch of salt to help release their juices. In this way, leeks get sweeter and therefore tastier. You can then add them to the Bechamel sauce and proceed with your gratin. It shall be much tastier!

I have never tasted a leek in my life, I am 57! I have seen you use these before in your videos and this has my curiosity up. I am going to plant them this year and give them a try. They remind me of giant scallions. I am sure they need to be started indoors . BTW Kevin, I made your chicken and dumpling / biscuit meal yesterday from my own prossessed birds and it was a hit! My hubby loved it and it made extra freezer meals for when he stays at our other farm . I love your channel, you give me new meal ideas, I love trying new things! ❤
Leeks are wonderful, and you can have them many ways. Give them a try! But ALWAYS wash thoroughly in plain cold water first, because they will have tiny sand particles from growing, and it ruined a batch of leek soup I made... couldn't get past the gritty texture and had to ditch it all. Lesson learned!

I absolutely love cranberry sauce, and your recipe looks like a winner! A definite must try. I buy the canned cranberry just for backup. I also make homemade. Sometimes I add cinnamon and clove, along with some orange liqueur. I didn't think to use red wine. I have seen recipes where you top a wheel of brie cheese with cranberry sauce and heat up in the oven to serve with crackers or toast points for an hors d'oeuvre at holiday time. The souffle and the gratin are must tries, for sure! I make a very similar cranberry sauce, but I wait until after the holidays and buy several bags of cranberries when they go on sale. I then make the sauce and can it (it's basically a jam), and also dehydrate and vacu-seal the dried cranberries in jars to use over the holidays.
