  • Transcript: I’m Father Dominic with another baking secret from the Bread Monk. I love a good stack of pancakes in the morning for breakfast, so here’s a few tips for making your flapjacks even better. Whether you make your batter from scratch or use a mix, be sure to let the batter rest for at least 10 minutes before you pour it on the hot griddle. The batter will thicken and develop better texture in the finished pancake. Now, if you make your batter in a pitcher, it makes it easier to pour onto your pan and kinda control the size of the pancake. But if you put it in a squeeze bottle and put somebody’s initials into the middle of the pancake, I’m gonna make an A for my sister, Angela, and then pour the rest of the pancake around. Remember, you’re gonna see it from the other side, so make the letter in reverse. How do I know when the pancake is done? If you look on the side of this one, you can see that the bubbles have popped and stayed open. They haven’t closed up again. That means it’s ready to flip. Look at that perfect golden color.
