This makes me curious which microbes metabolize the spicy molecule capsasin, especially since you ended up not getting any spicy flavor in the end product. Awesome video it was a pleasure to watch!

Where did you come up with wild yeasts not going beyond 5%? wild cider yeasts normally stop around 7ish but some wild yeasts go way further - even further than your champagne yeast.. It depends totally on the wild yeast strains you get and the amount of sugars they have to chomp on :) Next time try it totally wild and see what you get, experimentation is the key to invention. Oh and I've made a dandelion wine in the past - tasted a bit like iced tea with gin - but hopefully healthier. Cheers
Hi Chris. You may have touched on this but I made a soil/IMO2 concoction and raccoons dug up every plant. Nice little holes exactly where I put the soil. Is this why you proceed to IMO 345 or was it a bad move to mix IMO2 extract and soil? Still lovin this stuff!!

Hey can I ask you about using kombucha in KFN. Can I use my kombucha to substitute vinegars? Can I make a solution from kombucha? I ask because sometimes my kombucha becomes too sour and I have too much.

Chris, can you just apply the "lacto" liquid (from rice) directly to the soil and not have to spray? Also, can I just gather the mycelium in the forest and spread that directly to my garden without having to do the rice in the box method?
