My company sells services. One service can have multiple sub services and then price can change depending on what customer chooses. Can item groups be used for that?

Hello,
No, Item Groups is used to create multiple Items at the same time which have different attributes.
In your case, you need to create Individual Items

Thank you for the video. Should I use a composite item or an item group for an item with multiple components and different variations? e.g My company sells a product made as a composite (using multiple parts) however this product also has different sizes and colors.

Composite item and item groups cannot be combined. You will have to create multiple composite times for sizes and colors
