    Hey everyone. I made a brief mention in this video about wind turbines. My knowledge on the topic was based on a single message and photo I'd received from a friend that I'd received in passing and literally just thought, "Whoa, thats crazy." I had no additional information and was ignorant in even mentioning it, as i have NO clue about any of the facts or political opinions circulating around this topic. I frankly have not turned on the news or spent much time on social media over the last few days, as I have been up to my ears dealing with the single-most stressful week I've had since beginning homesteading.
    I wish I hadn't said anything at all, because I don't have the knowledge to speak on the subject, but I did say something and have received no less than 100 messages since then from people making varying degrees of correction and accusations.
    Please, take my comment as the ignorant offhand comment that it was and enjoy the rest of this 30 minute vlog. No comments made in this vlog are a representation of my political beliefs, my beliefs on legacy, my concern for people, my favorite news media sources or anything else. What I meant to communicate was this: "This is a big deal, a lot of people are struggling and it isn't to be taking lightly." and THAT, i stand by.
    Grace, please. (Any argumentative comments will be deleted. I view this comments section as an invitation to sit at my kitchen table. If someone verbally attacked me or any of my other guests at my kitchen table, I would kindly escort them to the door. You and I don't have to agree, but I do expect kindness.)

      I only mentioned it because there is a lot of finger pointing in the wrong direction. The people in Texas and I am sure in Arkansas are suffering, my heart goes out to anyone in distress right now. I hope there are sunny days and warmer temps.in your future.

      Jess, You shouldn't even have to explain! You said nothing wrong!! You and your beautiful family give us access into your lives to see all the amazing things y'all do there! You don't HAVE to do it! Most all your subscribers know you (like all of us) are human. Don't sweat the small stuff. I really enjoy your Vlogs!! And I appreciate you, Miah, and your family allowing us a peak of your daily lives!!
      I am in the Houston area, was without power for 48+ hours (it came back on late last night!! Yay!!) And my house has suffered 2 burst pipes flooding half my house ceiling to floors (ugh!!)
      You said it perfectly!! The South is not equipped to deal with this kind of weather!!
      Keep being the beautiful sweet lady that is teaching me how to garden, and say what ever you want!!! 😉

      The most important things I took from this vlog is your time with your boys and how you make dumplings. Followers that have been watching you for many years know you don't get into those type of topics and know you have a loving heart. I'm sorry. Stress levels are high for so many right now and we need to be kind and generous in God's grace.

I winced when I heard it due to the tendency for misinformation to spread like a wildfire, but knew it was not my experience that you engage in misinformation, so I trusted that history.       Yeah, our DOT is not equipped to deal with ice let alone this much snow here in southeast Arkansas. And I also am worried about my bees. I've been told by an old farmer that God didn't make animals with a heart lamp attached to them. He made them with fur to keep them warm so not to worry about them. But like you, I always worry and have multiple heat lamps going. And before anyone says anything... we have them stable so they will not fall, get loose, or can be knocked over to cause a fire.

      Haha! I'm totally saving the clips of my kids interrupting my videos to do this one day! I jist added a blooper at the end of my last video where my son kept yelling every time I went to pour the coffee! (I was trying to do one of those relaxing coffee making clips 🤣)

      I'm dealing with the same thing in Nova Scotia, Canada.....we've been getting more rain than snow....only 3 snowfalls so far here.

    I live in rural Central Texas with 3 wind farms in our small county ... our Turbines are not frozen... we have our own power station and grid - no power outages ... the power outages are due to gas, coal and nuclear plants that depend on water for creating power are frozen ... it is not true that all the turbines are frozen. We also have snow plows because my town has 2 major state highways running in & out ... my street in town has been plowed multiple times because it is a major state highway coming in and leaving ... lots of miss info out there - yes, people are suffering but it is not due to wind turbines. My major concern right now is that only one local church provide just one day for warming station and food for those needing it - lots of people in our outlying country areas are without power and water and those that could help are not.

      I think it was the governor spreading that misinformation. He was blaming AOC in NY. The blame is his and his alone. He should have had the state ready for this storm. I feel sorry for the poor people suffering in the cold this week.

    I’m from Minnesota; 12 inches of snow at once and then 6 after is a lot anywhere (even for us and we have the infrastructure). Hope you are all doing ok. Wish we could help those without power.

      I had slippery dumplings for the first time in high school at the school fundraiser of chicken and dumplings. My family had moved further south in the state where we lived the year before. I have loved those dumplings ever since, soooo good!! I learned how to make them from my boyfriend's mother who didn't measure anything. She was a good teacher because even mine turned out good. 😀👍💟

    Cannot imagine living anywhere but Colorado. Beautiful, 300 days of sunshine a year, no humidity, low bug pressure. But you live where you live and everyone loves their home!

    Wind turbines are only frozen in the states that chose not to set them up to run in the cold. States near Texas that are just as cold or colder have working turbines. This is a Texas problem. Also, most of the energy problems in Texas are not even due to the turbine issues there. The main issue is with natural gas.

    Here in Wyoming we had -24 (-36 windchill) on top of 4 days of snowing over the weekend..... it's warmed up to 27 today! Something about warm tea, fuzzy socks, & a Blaze King woodstove roaring gives you the feels, lol i.e. coziness & gratefulness

      Be thankful you have the wood burning stove. Many places gas and electric have had rolling blackouts with nothing to keep you warm.

    Even up here in Wisconsin 12" of snow is no joke, especially followed up by another 6". We've had an unusual amount of snow up here too.

      Michigan here. That much snow is definitely nothing to sniff at. We have the infrastructure to manage and that amount of snow would definitely cause issues.

    When I was a young child I always imagined having a garden and some animals as I got older it almost seemed like it was a pipe dream, but last year I planted tomatoes and other veggies following your methods - oh my THEY GREW. I was telling my mama, I wanted to have animals on a homestead on the part of my parents land. She said "Do It" -- that push was needed to make me say outloud " I can have chickens, goats, pigs, and maybe a cow-- and don't forget the cowpanel high tunnel"...thank you Jess for reinvigorating this young ladies childhood dream as it comes into fruition.       yeah I heard that from my family too, but it didn't make sense that the wind turbines were less than a quarter of your grid supply to cause such devastating brown outs. I hope you're safe and warm wherever you are in Texas.

    I love you! I do want to say though that Texas is mostly relying on natural gas/coal etc and those are ALSO DOWN from the weather not just the turbines. It’s crazy! Pray for Texas!

    Hey Jess! Keep the next snow on your greenhouse roof! The walls are glass enough! Snow is a great isolation to prevent the heat from leaving through the roof! 👌🏼

      It depends on if the structure can handle the snow load - if a structure isn’t built with that in mind you could have the roof collapse

      I noticed a temp increase in our greenhouse last time I took the 10 inches of snow off the south side only. We're in NH at 43.5*N latitude and 1300ft altitude--YMMV!

    One of the best parts of our usually snowy winters here in Omaha is feeding the birds and the squirrels! I buy them apples and bananas and veggies to add to the seeds and nuts. It's fun.

      In my PA Dutch world, we call it Chicken Potpie. The difference is to add an egg to the dough and potatoes, corn & carrots to the broth. Comfort food for the days after Sunday's Roasted Chicken dinner.

    Homeschool kids raising their hand to speak in the dining room ❤️ my daughter homeschools. At first I was concerned my granddaughters would miss out on things like social connections, but she works hard to have them involved in extracurricular actives. I appreciate and admire her dedication to raising their girls.

    Love your channel, love your info, so in the spirit of good info...I'm hearing the "wind turbines are frozen" bit a lot and while that's true, EVERYTHING is frozen including natural gas pipelines. Texas' energy is about 80% non-renewable so wind turbines being frozen is not the biggest problem here. None of the energy infrastructure was built to account for freezing temperatures.
    I'm hoping everyone suffering through these crazy temps right now stay safe and stay warm. Here in Canada we're used to it and built for it and prepared for it, but it still sucks and we know how bad it can get for people who are unprepared. It's not a laughing matter. Stay warm!

      openPandoraBox...well you taught me something I never knew. Gas lines CAN freeze 🥶 with certain conditions. I am reading up on that now ☺️. (Never too old to learn!)

      @@aspenriverrun Yes! It's the water in with the gas that freezes when the pipelines aren't insulated to a low enough temp which, for Texas, these kinds of temps are just insane. But in other parts of the world that have these temps on the regular, we still use natural gas AND wind turbines to generate energy without them freezing. Correct me if I'm wrong on the water in the gas, but I do believe that's what's freezing and causing so many problems.

      You're not kidding! I moved from Atlanta to Chicago recently for work, and OOFH! My first month here was the January we had NEGATIVE 50 DEGREES!!! We've got about 3 feet of snow in the backyard at the moment, and I'm happy to just be curled up inside with a hot cocoa.

    Massachusetts mama of 3 little boys here. Loved watching Ben milking. He is the sweetest little guy. We are used to snow here in mass, but I think you are absolutely right about the infrastructure differences. The plows are out at any sight of snow here. Most of us have generators, wood stoves, etc. it is just a whole different scenario if you are used to it. Stay safe!

    It takes a lot to navigate the northern winter weather, and I love seeing people experience it for the first time. Snow is magical. And you touched on it in your video- there is a stillness, a freshness, and a purity that washes over the land with snow. Everything gets quiet and the world slows down, and for a brief time it becomes a familiar space completely transformed. Enjoy it. Drive SLOW. Take your time and soak it in. ***I also want to say that I am praying for all of you in the southern states that are suffering in the cold with power outages. It is scary when that happens- I have experienced that in years past and even with experience and ability to heat water on the stove (gas), and wood burning stoves to take the edge off the cold in the house, it takes a tremendous amount of energy and upkeep to keep things going all day long. My heart breaks for all those who don't have any experience with this, and perhaps don't have the ability physically to take these measures. Sending love, and wishing I could send warmth.

      jennifer hunt I think the hardest part about winter is facing going outside to do the chores. Once you're out there though it's often beautiful. And coming back in, striping off and having some cocoa or coffee...wonderful, lol. I'm pretty good with winter. It's mud season I hate :-/

    I’m in Houston, my pipes burst; no water for three weeks due to the shortage of plumbers. I didn’t leave my water dripping overnight as we were instructed to. I felt like it was my bad. I was so thankful for our wonderful neighbors letting us get water from their water hose. I was thankful I had a gas fireplace to keep my elderly mom warm. We had no power for three days. I’m thankful we survived as many people in Texas passed away during this ice storm. Jess, all I have to say is this VLOG made me hungry for chicken and dumplings. I started to follow Roots and Refuge about 3 months ago. Thank you for all your Blessings. This channel has been a life changing event for me.

    As someone from Saskatchewan, where -40 happens every year, and large amounts of snow, it upsets me to see people making light of this. Our houses and cars and clothing are built for this. We do it because it’s what we’re used to. I couldn’t imagine experiencing this weather out of nowhere. Stay safe and warm!

    I started my peppers today. I sat on the floor of my kitchen, looked out the sliding glass door at the snow, sipped tea and hummed while I put seeds in trays. Just felt a little defiant. 😊 (waving "hi" from Waxahachie, Texas!)

    I remember making “noodle dumplings” with my Grandmother. Rolling them out on the top of her chest freezer in her kitchen. Flour everywhere, but lots of laughing and lots of of love ❤️. Thanks for bringing that memory up for me...I haven’t thought about it in quite some time!

    I used to make the noodle style dumplings you mentioned until I found pioneer woman's recipe where she includes corn meal. It was a game changer and replaced the family recipe as the favorite! We take our dumplings seriously haha! Glad you all are safe and warm.

    That’s so cool about making broth from chicken carcasses after roasting them. I do this often and can the broth. Running the canner also warms up the house.

    First off, I want to thank you for these videos. I've been gardening for a couple of years now but recently found your channel. Lots of good information. I have a normal backyard so I take bits and pieces of what you say to break it down to my level. Second, I live in South Texas and we got hit hard by this freak winter storm. We lost power for 36 hours (some were without for 4 days!). Third, I bought a small greenhouse with Christmas gift cards and planted my seeds 2 weeks before the storm. Inside my greenhouse hubby built an electric box with 4 outlets so I could have a heater and grow lights. That was working well for those 2 weeks and my plants were big enough to transfer into bigger pots and start new seeds. Welp, we weren't expecting those rolling blackouts and finally loss of power. Lost a lot but some survived (unbelievable!!!). The seeds I planted the day before, some actually popped up during that outage (Radishes! Who knew!?!?). We're back to 75 degrees now so I reseeded. Last, I'm going to thank you again for these videos, but this is for giving me the courage to start my own. Right now just for my friends on FB. I've been in the independent film industry for a very long time but fear has seeped in and I haven't wanted to be in front of the camera for a long time. Watching these videos has encouraged me to just step out in faith. Many blessings to you and your family!!

    I hope your power stays on through this. I have lived in colder places, but I like warmer. But what you say about not having infrastructure is so very true. A once in every 20 years winter storm doesn't justify snow plows anyway. But having said all of that, your farm looks so beautiful!

    In Seattle we have similar issues we don't know how to deal with snow & we're weather wimps about the one week of 80 degree weather we get each July/Aug. too. One of my favorite things about snow is the way it absorbs all the sound.

    I love winter snow because it helps kill insects for less pest pressure in spring. Ticks, fleas, ants, etc. But once it’s April all I want to see is Easter bulbs popping up flowers

    Hey Jess, I live in Canada. It was -31 here today. I totally get that you just are not prepared for the weather. A couple of suggestions. Put something heavy in the back of your truck, like a bag of sand. It will help with traction. You can wrap newspaper and then plastic bags around the bee hives to try and help them survive. Remember to leave a space for the bees to leave cause they deficate once a day regardless of the weather. You might also want to feed them. Put boots and outdoor clothing to hang dry near the fire or on radiators, especially in between playing/working every time. This saves on using the dryer or going out with wet stuff on.

      I'm in Tulsa as well. This is the coldest weather I've personally ever experienced. Yet, my best friend who moved to Alaska has had weather 15 degrees warmer than us this whole time... yeah... in Alaska (Anchorage).

    When you said it was soooo earily quiet, that's what I love so much about winter. I live in upstate NY and just taking a moment to myself, all I have to-do is step outside in the middle of winter, plus the air is so clean smelling.💓💓💓💓🌨🌨

    Just know that the wind turbines work in northern places. The rolling outages is not due to the small percentage that is from the turbines. Actually the turbines are currently putting out at a higher rate than the projected plan for this time period. The outages are due to neglected infrastructure of electric and gas. If Texas was so green that it’s shut down due to frozen turbines that would be something, but we all know that is not the case. Jess, I’m not at all getting down on you for repeating what you’ve been told, I’m just setting the record straight. Wind turbines are a way for us to become less dependent on the big oil companies, but those that have vested interests in those companies will benefit from us all believing that renewable energies are a bad thing.

      My understanding, from the news, is that the extra demand due to electric heating overwhelmed the system. The rolling blackouts are deliberate to reduce load and not have any one area out for a long time.

      @@ecocentrichomestead6783 yes the rolling black outs are done in order to maintain the decrepit system, so it is not destroyed by the increased need. If they don’t do that now, it could lead to a break down that could take months to get the system back and running. The increased need was an inevitability that was known, although extreme. It was a choice to NOT build the system able to deal with this very extreme level of cold. It was a choice between cheap energy for “now” instead of spending the money needed to build a better system that would have been functional and enable people to stay safe in their own homes. I will never live in another house that does not have a wood burning stove again. I just started canning this year and would have have my first food garden last summer, but I got COVID last summer. I did get some beautiful tomatoes and zucchinis though. It’s been a long recovery for me, but I’m getting started on seedlings to put in my suburban garden this spring🤞
      Makes me crazy that so many hard working people suffer because people that have all the privileges of money and power make bad decisions.

    I was brought up in the UK. My Mum used to put shredded beef suet, flour, butter and milk together and mix. Roll into 1" balls and put in the pot and cook with the stew. The best dumplings you have ever tasted. Stay warm.

    ETA: Your perennials should be alright if their roots went deep enough. We went negative double digits years ago and all the perennials were ok. Mulch does wonders.

    I’m a ND girl 💯! I am a huge fan of snow (God’s glitter) and the cold because so many of my good memories happened in the winter with all the snow. Snowmobiling, snow angels, snowmen, skiing, sledding, etc. I can’t imagine a winter without snow. I live in SD now and snow melts within a few days usually (this cold snap is making it last longer...glorious!) I enjoy watching your channel and am trying to glean all I can to get prepped for this coming gardening season. Thank you for sharing your wisdom. God’s blessings to you and yours!

    Don't let anyone up north or up here in Canada fool you!! Going from warm to crazy cold and snow storm shocks even us. When the weather turns in December half of us are big babies about it. We just get use to it. Then it's Spring and we are happily in mild weather again, for the most part. My prayers go out to those that didn't fair so well with all this weather you are experiencing.

    I am a "northerner" from NJ. Even though we are used to it, I don't like it. And I can totally emphathize with how hard this must be for all of you. I realize that you folks are not prepared for these extreme conditions.
