That wall of composite might undergo shrinkage creating a marginal gap between buccal and lingual wall...so...better wud be creating the wall by 2 increments a buccal one and a lingual one so tat shrinkage stresses cud be minimised
I would think that it would be better to risk a micrograp on the margins of the restoration where they will be cleansable than to have a seam in the interproximal area that will be a safe haven for bacteria which may lead to caries on the neighboring tooth or apical to the restoration.
Pls show complete restoration to the final layer and finishing. It would be more informative and helpful. By stopping it incomplete is like " I will give you only half of the advice." Regardless thank you for the video.

I can carve back quickly with burs, but rounding the matinal ridge with burs does get time-consuming. This was good advice! Thanks!

Sadly im most countries, we still use matrix bands with fixed height also with tofflemire , it's difficult for the doctor and the patient as well.
