*MONCHONG* (Pomfret) - JAMAICAN Brown Stew - Catch/Clean/Cook

I have Vince and his family out looking for their first ever swordfish in February 2021. We caught a Monchong (pomfret) first drift, but unfortunately pulled the hooks on our swordfish later that day. Back at Bud n' Mary's Marina we fillet the fish and Vince takes the fillets with him we keep the carcass. Jamaican Mike says he can cook it, and after figuring what parts of the meat we could get off the carcass, Mike makes his delicious Jamaican Brown Stew! Enjoy!
