Great review! 👏🏼 I think they should maybe capitalise more on it being the “oldest restaurant” because the overly contemporary decor seems to conflict with the roots of the restaurant. For example here in England, UK we have a lot of historic places and for example a place not far from me they hold medieval banquets, and the decor is suited to that and the age of the building. I think they could boost their interest even more to lean into its history, as thats what people are interested in when coming to a piece of know for being the “oldest”, not just the food alone, but the overall aesthetic, to imagine what it was like back then. I’m sure they still get lots of custom, but thats just my humble opinion😊. The place outside looked so beautiful to wonder around, and just enjoy. It's common to round up to the nearest round number, you might tip up to 10% if it was really good. You're never going to tip 20% or above and the staff aren't going to get sniffy if you only leave a little. I often pay with notes, saying "Stimmt schon" (It's already right), meaning whatever is left is the Trinkgeld (i.e. tip). For more casual places you can just leave a few coins when you leave too.
There is also the oldest hotel in the world, Nishiyama Onsen Keiunkan in Japan, which was founded in 705 AD. The hotel was founded by Fujiwara Mahito during the Keiun era (704-708). It's been passed down through 53 generations of the same family.
You missed the daily Mozart Dinner Concerts, which are performed in the restaurants Baroque Hall. Rather than red wine, I highly recommend a glass of Calvados with your apple strudel. That courtyard at Christmastime is magical!
Yeah, I didn't know about the concerts until after I went to the restaurant. It was sort of a spontaneous visit. Yeah, Calvados would've been nice, but nevertheless, I was still happy with my wine.

No No No. Sobrino De Botin in Madrid is the oldest restaurant. ALL the others have moved or had breaks in service. Stiftskulinarium was built as a monastery, but is the oldest building a restaurant has been situated in. They are however both excellent hostelries and we are lucky to have feasted there. 😃
I was going to protest, because Den Gyldene Freden in Stockholm, Sweden, opened three years opened three years before Sobrino de Botín and is still in the same place, with the same name. But Freden was closed for four years during the late 1800s, that's true. Either way, it really is quite fascinating to see and visit places with so much history to them.

You didn't say Stiftskeller that wrong, just broke the syllables in the wrong place :) Stifts- Keller. The Stift- relates to the abbey, Keller means cellar; the -s gets added because it's genitive, the Keller belongs to the Stift. German word formation is pretty logical once you get used to it. To a British ear, your pronunciation of caramel was more off ;) Looks like the restaurant was better off sticking to the classics rather than trying to modernise them.

That having said, I really can't appreciate serving wine in such measured quantities and if you _really_ have to: besides Champagne, a bottle of wine serves 6 glasses, a.k.a. 75 cl / 6 = 12.5 cl per glass. if you really want to be so precise, which is annoying in a gastronomic context, at least serve a standard glass of wine. 0.1 l glasses of wine is just stingy and communicates you as a guest are foremost there to provide money. A very unwelcoming gesture!

I really dislike historical locations being vandalised with modern art and furnishings. It feels like scribbling with crayons over fine art, just gross and arrogant.
I see both points but it's great to see it being used to enjoy the environment instead of just walking through like a museum and use it like it was intended and not just so walk through visual pleaser
But I do wish the decor matched the environment and not pop out like a eyesore. Not saying that it looked bad but something that complements the historicness of it
