I If you sous vide to 144 why to you grill afterward? I get the grill flavor and like that but should you not sous vide to a lower temperature and then bring it back up to a higher temp on the grill? 144 is a bit rare so I guess the question is what is the final temp that you are shooting for?
We were going for 155 degrees. That about medium for these thick cuts. I am following the guide supplied by Avalon Bay in the book. It was perfect for me. The great thing about this method is that you can hold the meat there for hours and grill it off fast to serve when you want. That is why this is so popular at restaurants.
