      I like when scientific studies give 'expert' wine tasters a dozen samples all from the same bottle, and they go on to describe how different they all are. Any first year biology student will tell you the human sense of smell and taste are ridiculously subjective and lack consistency, and if you get into psychology, the mere suggestion that something is bad and nasty will ruin the experience of any food or drink for most people. A mass spectrometer basically renders human wine experts redundant for examining any suspectly labeled wine.

      @@kauske That's why they maximize the information taken from the color and behavior of the wine. Yes, they can describe it in different ways but the notes they look for to determine the storage method, for example, are pretty major and distinct, are they not? Critiquing wine and saying what's "good" or "bad" is iffy, but just getting this information seems pretty repeatable and founded in scientific principles.

      @@averagelearningenjoyer4399 If you want a study on the subjectivity of the human palate for wine, look up 'Frédéric Brochet wine study,' skip the news outlets and go right to the source. I'd link it, but youtube auto blocks comments with links. Otherwise you can look up literal decades of food science and restaurant technique. any half decent chef can explain that a bad looking restaurant can poison the opinion of your food long before the patrons receive it, let alone taste it.
      Since you want scientific sources, I assume you're also aware of why we do double blind studies, as without them the influence can skew the results so badly the whole study is worthless. Simply mis-labeling a bottle can be enough to skew results of a tasting, same with dying white wine red. Expectation is a huge part of human psychology works, that's an established fact that doesn't require sources.
      If you want information on mass spectrometry or other related ways of determining food and beverage composition, you're sort of on your own to look that up, there are tons of places you can get info on food science like that. We're past the point of needing an expert to judge wines and ensure rare wines are not counterfeit, machines and labs do it better. The reality is that these experts exist mostly to exploit the fact that if a respected expert says something is good, many people will perceive the taste, scent etc as better than otherwise.
      It's why experts review well known vineyards consistently better, it's why people buy these well known vineyards wine more than unknown ones. Aside from absolute swill, most wines are fairly decent and far from undrinkable. A lot of what you pay for is prestige, a 10-30 dollar bottle versus a 100 dollar bottle is likely not an appreciable difference if you didn't know which was which, otherwise it's mostly in your head.
      And as for sommeliers providing wine pairings, that really doesn't require a dedicated expert. Literally every chef has to learn wine pairing theory in school, most wait staff in venus that serve a variety of wine learn it too. It's honestly a lot more theory to make a decent pairing than super-human sense of smell. There are undoubtedly some sommeliers who are able to very distinctly tell wines apart, but most end consumers just won't be able to.

      @@aidenarmstrong2863 No, probably not... it's a huuuuge step up in work and time. It's also a bit more expensive to self-fund, and harder if you don't work in the industry (I don't, I'm just an uh... enthusiastic amateur)!
      I'd recommend anyone with any interest in wine do level 2, definitely worth it for the enjoyment factor alone. :)

    My Cousin knows a lot about wine, she can probably tell you which wine goes with every food. She grew up at her father's bar and he taught her, and in the couple of places she has been working, most of the people has been wondering why she has never got a Sommelier certification.
    That's the clinch, my cousin is allergic to sulphites and can't drink wine, the simple smell of it makes her feel sickly, and to get the title, you need to do the whole smelling, tasting thing. She was just fed the theory by her dad and has been reciting it ever since.

      My sister did a similar thing. Learned a lot as a waitress in a 4 star restaurant, but is allergic and can't drink wine at all. She knows a crazy amount but never will apply it to her own life

    The really funny part is when sommeliers can’t tell the difference between red wine and dyed white wine. Specifically, not recognising the red wine they were given was actually identical to the white they were given, just dyed red.

      They did the same with an "expensive" wine and a "cheap" wine, but (big surprise) they were both the same cheap wine!
      They just filled a fancy bottle with the cheap wine and the sommeliers were fooled 100% of the time in the experiment.

      Depends on the sommelier, the best have no problem with that. Here is a video of a Master of Wine doing the test you mentioned: ua-cam.com/video/sN83j5ZOUm0/v-deo.html&t
      Master of Wine is a similar qualification to Master Sommelier. What I have learned is that many of these experiments are done on 'Wine experts' but not expert blind tasters and that when a MS or MW replicates the experiment they have no problem with it. Fact is that blinding tasting is incredibly hard and people who can do it well consistently are very rare but definitely exist.

      Like I said any good chef knows how to pair wines. You say they are in demand in high end restaurants and of course you are right. However this is not to pair wines though if employed I imagine it often is something they do. However the main reason is "being fancy" and pleasing wine snobs. It´s as simple as that. The purpose of high end restaurants is moreso making customers feel important than (just) providing good food. Sommeliers are a big part of that.

    The video I have been waiting for! I follow on social media a Master Sommelier who was based in Charlotte NC for sometime, he sourced wines for the nicest upscale restaurants in Uptown. I visited one of the restaurants, had an outrageously expensive steak, and saw the wine locker and the visual guide (of the restaurant’s wine collection and it’s resident Master Sommelier) on the wall.

    The wine color doesn't depend on the climate of the wine region but on the grape varieties. Wines made with Grapes like Pinot Noir (grown in different climates) have more of a translucent red color because of the thin skin. It's the skins that give the colors.

      There are many factors. You're right that varietal matters, but climate does too. You mentioned Pinot grows in many places, and it can look different in the glass depending on whether it's warm or cool climate Pinot. Wine-making techniques, e.g. whole bunch fermentation, used by the winemaker also affect colour as does whether the wine was fermented in oak or tank.

    My father Is a Máster Sommelier. But Is always hella busy and rarely talks about how His work works. I was always curious of how did he guess every aspect of a wine. Father did give hints and notes, but this video ties It all together

    Didn't that scientist from France debunk wine tasting? I'm sure that Masters that have studied for 30 years are fairly accurate, but your average wine snob can't tell the difference between a $5 bottle of Yellow Tail and a $500 bottle of Y 2020.

      Depends on the sommelier, the best have no problem with that. Here's a Master of Wine (similar rank) telling white from red: ua-cam.com/video/sN83j5ZOUm0/v-deo.html
      What I've learned is that many of these tests that 'prove' the difference can't be told are done on wine experts (who don't specialise in taste). And then a MS or MW replicates the test and they'll tell the difference no problem.
      Blind tasting is incredibly hard, and people who can truly do it are rare, but definitely exist.

      @@monhi64 You also have to factor in that if you dye a wine red, say 'this is a red wine', it has a huge psychological impact on human perception; which is another one of those tests. It doesn't so much prove wine tasters are bad, just that humans are hugely suggestable and subjective creatures.

    Wait so swirling the wine and watching the droplets gives you more accurate info on sugar and alcohol than just tasting it? Those are the only two I think I could reliably taste

      I think _"accurate information"_ may be the wrong way to see it: think of it as *more* information. of course you can taste sweetness and even alcohol, but how much you taste is hard to measure, plus it can be affected by other flavors. think if it like you need to measure some space for a bookshelf, and all you have is two sticks you don't trust the markings on. you use both of them, and it gives you a range of what's possible. if you buy a bookshelf that's close to the middle of that range, it's probably going to fit.
      one thing to keep in mind about measurement is that *_all_* measurement is relative. we only think some measurement is absolute because we're used to fancy systems like grams and so forth, where the basis for comparison is hidden.

      Our taste buds are surprisingly unsophisticated. There is often no way to tell one sweet substance from another. And wines have some compounds that can taste sweet but are not sugars. That's even more true for ethanol, which is more easily detected by its dryness and texture than its actual taste. But wine has other compounds that affect dryness and texture too. So getting more info can help.

      As with cheese, coffee, and chocolate, once you aren’t buying the worst kind, any moderately priced cheese or chocolate will taste “good” ie. Totally pleasant.
      But, if you want more interesting flavors, you may need to find a slightly special one which will either cost more because it is harder to make and maybe a little extra if it is very popular and a lot of people want it but there isn’t very much to go around due to the size of this particular crop, cacao grove, vineyard, or cheese maker.
      So to get a good tasting product like coffee you can do that for quite cheap maybe $10 per bag instead of $6 for the cheap stuff. But if you want to try something with a apraxia’s floral note for example, you may need to buy a dry processed single origin coffee that would cost $15-25 per bag.

      The tech maybe caught up but certain processes like hand harvesting, high quality oak, prolonged aging and reduced yields add to the price of the wine, also replicating certain regions climatic and soil conditions is next to impossible without buying grapes from more expensive regions.

      There is definitely a point where reputation and collectors push a price beyond its worth taste-wise. Yeah, 2 buck Chuck is a decent wine. But you can definitely get more nuance and flavor profiles from a more expensive wine. I think the price point where price starts to deviate from actual taste improvement is around 100 dollars US. But not all 100 dollar wines are better than 2 buck chuck either. As in any industry the name on the label can increase the cost - sometimes without warrant.

Manipulation is also rampant and the taste is far from okay. Spend more for an honest product please. Wine should be as cheap as possible NOT CHEAPER than possible.

    I've worked with so many sommeliers of various levels. They are making it up to a man(and woman). Have yet to meet one that can pass even basic tests of their "knowledge".

      Depends on the sommelier, the best have no problem with that. Here's a Master of Wine (similar rank) telling white from red: ua-cam.com/video/sN83j5ZOUm0/v-deo.html
      What I've learned is that many of these tests that 'prove' the difference can't be told are done on wine experts (who don't specialise in taste). And then a MS or MW replicates the test and they'll tell the difference no problem.
      Blind tasting is incredibly hard, and people who can truly do it are rare, but definitely exist.
