This has never happened to me but I would check to make sure you're not using too much baking powder. Also check the expiration date and make sure you're using aluminum free baking powder. Hope this helps.
I'm gonna give this a go i don't like other recipes it seems like they're using a ungodly amount of baking soda. You seem yo know what you're doing. Not being an ass or anything but would it be best to start them low like at 250° for 30 mins then finish them off at 450 for 20-30mins
Yeah you're absolutely right. If you cook it at a lower temp, the fat and moisture is drawn to the outside and after you turn up the temp, it crisps the wings. I've tried that method as well and I was actually going to compare both methods to see which one yields better results, but I haven't had the time to yet. Also baking at a constant temperature is easier/faster. Don't forget to use aluminum free baking powder and let me know how it goes.
