    I am lucky enough to live in a Dallas burb with a huge Indian population. I benefit from not only Indian restaurants, but also Indian supermarkets. And I am so grateful.

    Coming from a region of India that prides itself with thousands of varieties of rice, I can tell you that most of the exported brands of Basmati are excellent. The cooking technique is very important in bringing out the flavor and texture. One secret is to soak the rice for half hour before cooking.

      What do you do after soaking it? Do you let it air dry or do you cook it without frying?

      1. Rinse rice with room temperature water 3 times in a bowl by running your fingers through it until the water of the last rinse is almost translucent. This is to get rid of the rice dust/powder.
      2. Soak the rice in room temperature water for about half hour in a bowl where the water line is about an inch above the rice.
      3. Bring water to boil, add rice and cook until al dente. Stir every few minutes for consistency.
      4. Strain the rice just before it is fully cooked. Don’t be afraid to taste it to check for softness.
      5. [Optional] Add dash of olive oil and mix the rice while it is in the strainer/colander. Similar to pasta, this is to avoid sticking. Oil can also be added while rice is cooking.
      6. Put the rice back in the pot, cover it, and let it steam on low flame for about 5 minutes.
      No one gets this right the first time. And everyone has a slightly different technique. I find this to be the quickest way that works for me.
      Some folks add salt, cloves, cumin and/or star anise while cooking the rice. All are yummy. Just don’t overpower the Jasmin fragrance with other ingredients. Practice practice practice.

      @@danielw.7705 You should drain the water and then cook the rice in a fresh vessel of water to make plain rice , pulao or whatever recipe you are following.

    I’m from the Philippines. Ive tried many basmati rice brands here. So far Daawat is the best. I use same cooking technique. The rest gets soggy and mushy easily. But with daawat is not

    I usually buy rice in bulk from Amazon, and have bought Tamanishiki short grain japonica, and Royal brand basmati for years. Recently, on ATK’s recommendation I decided to try the Daawat brand., but the Daawat Traditional they recommend was not in stock, so I tried Daawat Superior, a more premium variety that was on sale, and I am very satisfied. It is noticeably longer and fluffier than the Royal brand, which was already very good. And anyone looking for some good sushi style rice, I heartily recommend Tamanishiki also, which I apparently have ordered 135 pounds of from Amazon over the last seven years.

      to indulge in that aroma:
      add Kewra water/essence (aka Pandan water)
      “2-Acetyl-1-pyrroline (2AP) is an aroma compound and flavor that gives freshly baked bread, jasmine rice and basmati rice, the spice pandan leaf their customary smell”

      they probably did.
      the TV show is not all of the tests. They probably did 10 or so rice brands. They pick 2 bad ones for TV and then 2 good ones. The winner + another, in this case the most expensive. Royal was probably pretty great but not quite the winner but also not the most expensive.

      You simply cannot trust this video and channel.
      Look at 0:19. They display 8 different brands, one of the world renown TILDA. And how many rice to taste on the table? Just four. They, intentionaly, omited 50% of the brands.
      0:12 "And Jack is here and is going to tell you wich brand to buy"
      1:07 this frame is coming all the time. pay attention at the display. It's on the right. Why right? because the right is associated with good in our brain. and the daawat bag is in full evidence. 1:37 is also very clear about that. And look at the "cooks" in the background. More like paid zombies to fake cooking than anything else.
      And the final nail in the coffin. As Majestic pointed out. How come ROyal wasn't tested and talked about? another proof it's a paid advertising for daawat.
      That channel is a disguised infomercial and that video certainly paid by Daawat.

      Yep. Royal is very popular and not expensive. Daawat is a bit pricey and is a bit better. Tilda traditional is a few dollars more, and is the best one can buy. Texmati and Lundberg are highly rated in tests, yet lose to Daawat? If I cannot get Tilda it's either Daawat or Royal. As for 1121 I stay away from it.

    The best basmati is called '1121' or sometimes known as 'kainet'. As most people know this, you often have to read the small print on the package. 1121 is a hybrid of all the tastiest and longest basmati and is also the longest rice in the world if you know you know!

      Well kainat is frm Pakistan.... you should also try "Falak".... there is another one called "super cornel" but I am not sure whether its available in your country or not....!

      1121 basmati variety is developed in Pusa agricultural research centre near Delhi. This is the most available rice varieties as they yield 19/20 ton /acre almost double than regular ones. In India , the most popular basmati rice is India Gate Classic rice.

    Daawat is a very well known brand of basmati. I cooked some biryani with that brand when I was on vacation overseas. Great basmati even cooked alone, fried rice or biryani and other middle eastern rice dishes. And it is affordable.

    For home use I always bought basmati at the Indian stores (tons of them in Texas). I never paid attention to the brands, but all were very good. The Indian restaurant I worked at started using Texmati, because it was cheaper, and the American guests did not know the difference (it was 1984 ha ha), The old Indian cooks would never use it at home, though 😎

    All basmati/fragrant rice enthusiasts should try out Kalijeera and Chinigura (sometimes referred to as baby basmati)... once I tried those I never looked back. Amazing quality grains!!!

      The baby rice variety right? Jeera ricei think. Omg. I was blown away when I pressure cooked it plain to make fried rice. The entire house was filled with such an intoxicating aroma. My husband too was really surprised, he asked if I made biryani lol

    I read somewhere that Basmati rice has lower levels of arsenic than other types of rice and therefore safer to eat.

      Must be why my gut loves the basmati! 😂
      FYI, get some whole cloves and star of anise seeds, and some olive oil, salt, and your basmati rice toss it all in before adding the water, toast it all on high heat stirring and making sure the rice doesn’t burn, when some of the starts to brown add the water and give it all a little mix to free any stuck rice grains, let boil and then cover with a lid and cook for 12-15 mins on low,
      You will love the smell coming out of that pot. And rice so good you’ll eat it right out of the pot haha,
      FYI remove the cloves with a fork. cloves are meant for flavouring food, not actual eating. they taste ugh 😣 on their own had the misfortune to eat one, nothing happened i just felt like crying 😭 haha 😂

    My favorite is India gate excel basmati. I have tried many and this one is the best! Long grain, aromatic and aged. It’s available on Amazon but our local Indian grocery store here in Fairfax Va sells it for $13 for a 10 pound bag. The key is to soak it just 15 minutes not less not more. 2:1 water rice ratio for rice cooker. Enjoy 😊

      How do you cook yours, do you add the rice to cold water then bring it up to temp, or do you add it to boiling water and cook it that way? I've been cooking mine in a sauce pan on the stove top, i rinse the rice then add it to cold water 2:1 ratio bring it to a simmer on med heat then turn it back to low , cover it with a lid and cook till the water is gone and there are small holes in the top layer of rice, which is the steam coming from the bottom of the pan, Then I take it off and fluff with a fork and serve. What good does soaking do, does it come out better?

      @@MaxStax1 Soak for 30 mins. Toss away starchy water. Then rice: water= 1:2 proportion in a vessel. If cooking in a pan. Boil the water, add the rice, cover and cook till all the water has evaporated. And very important. Let the rice rest covered for ten mins at least. The texture will be fluffy and not grainy.

      When you soak the rice, make sure to discard that water. It'll reduce the starch and makes the rice fluffy. It can even reduce cooking time as well.

    Fawn brand, from afghanistan, is a great middle eastern basmati. The grains run a bit shorter, but that nutty aged flavor and texture is strong. If you only have middle eastern markets near you look for it!

      I live in Toronto and have yet to find an afghanistan rice. One of the neighbours bought a few bags
      years ago. I should have asked where he got them. Even the Afghan supermarket only sells Pakistan rice.
      The big Halal supermarket does not have it either.

      aka “Aahu Barah” - with the deer 🦌 on the package…(either white cloth or burlap). Many recommend it, but we haven’t tried Daawat to compare to yet.👍

    Great show as always. Hey, but you guys missed my favorite basmati rice here in Michigan. It’s called Falak extreme from Pakistan. I have tried many varieties and just love basmati aroma and flavor.

    there hasn't been any rice of any kind by any manufacturer on the shelves of my local grocery stores since the quarantine began. i'd love some rice! maybe one day it will return.

    Elephant Brand basmati rice from India is the BEST basmati rice. It is very expensive, and can be found in Indian markets. To prevent counterfeiting, each bag has a lead seal.

    I'm wondering if it might be possible that the variety of basmati rice made in India just couldn't be successfully grown here. There are many reasons the domestic rice is different from other countries. You have to take in account the insect susceptibility, long storage, laws governing agriculture, climate, soil, market demand, etc.
    What's interesting is US rice is quite popular in Japan. So perhaps it's market demand for shorter grain rice.
    I'm looking forward to trying the imported rice. It's nice to see this video rather than going through the expenses of buying each individual brand to test.
    I'm wondering which brand are restaurants using primarily in the US.

      It is not that folks haven't tried to grow in the US. It fails. The environment plays a major role in how rice triggers certain genes during cooking. It's just not about location, but weather too. Basmati is exclusive to India and Pakistan, and its Himalayan regions, just as Bourbon is to the US, and Champagne is to France.

    I use Tilda brand brown and white. Cooks beautiful. I cook the brown rice in a pressure cooker,ten minutes and you have a very loose and fluffy brown rice.

    I LOVE Daawat, Falak and Tilda, best brands for rice. Most of them aren't even available online so I take the train to go to the biggest ethnic market in the capital.
    The best one for value and taste is definitely the 20Kg Broken Rice from Tilda, 1.50$ per Kg which is insane for how good it is.

    Thanks to the lockdown we ran out of our Indian Basmati and the closest thing we could get very locally was the Texmati. What a letdown it was. We ordered on line and when it arrived we gave the Texmati to our neighbor. 😀

    America should start trying some of the aromatic varieties of rice in India like Jeerakasala, Gandhakasala, Govindabhogam etc. These are shorter grain rice but the texture is amazing and way more aromatic than Basmati

    Many people prefer rice with the bran and germ intact, that is brown rice because it is lower on the glycemic index. Is basmati only sold as white rice?

    I would love to see a comparison between Basmati and Jasmine rice. I hate white rice, but I am trying to change my ways. I have been prepping and that is all, I buy.

      Jencikova Jenkis : Thanks for reply, my daughter cooks a lot of Thai food. Good I am storing 2 kinds of rice. I am giving all my food storage and my house to my daughter. I am moving to Philippines after Coronavirus lock down is lifted. A meal is not a meal without rice in the Philippines.

    Dawaat all the way. They also have the extra long variety, which is great for biryanis, pilafs, and other dishes where the rice is to be showcased. Great for Afghani, Persian, and Turkish dishes as well.

    I stand behind Royal brand, says it's grown at the foothills of the Himalayas, but that really doesn't matter because it cooks well, and is very versatile.
    leftover rice, fried with some eggs, fresh chives, Aloha brand soyu and bacon, or if you're vegetarian like me, bacon bits, makes a great breakfast! Make sure the rice is made the night before, makes it fry up better, Challenge brand butter helps, too.

    Soaking after rinsing is essential to obtaining the best results from basmati rice. A minimum of 1 hour and up to overnight. Doing so ensures the cooked grains are elongated and plump.

    There are some excellent basmati rice recipes prepared in a pressure cooker. I have pretty much refused to make any basmati unless I add cumin seeds and curry leaves into the mix. Plus, Chef John on Food Wishes channel has an excellent “Persian Rice” recipe. Check them out. I use that Tilda or Daawat brand.

    Tried almost all ( Indian ) brands basmati rice. We prefer either ' Tilda ' or ' Royal' brands. ( we buy Royal cause they are available not only at Sam's Club but also at lower rate compared to Indian stores ). Best aroma, long grains and not sticky when cooked

    What they don't talk about is how best to cook it. 5 minutes boiling, then drain it. Then put 2-3 tablespoons of water and 2-3 tablespoons of oil in the bottom of the pot. Add a layer of medium round slices of potato. Then add the rice back in with NO additional water. Make a kind of pyramid with the rice so it doesn't touch the sides. Cover and put a cloth under the lid. High heat for 4-5 minutes to make the potatoes crisp, then low heat for 20-25 minutes til it's done. It will never stick and never look wet like it does even in this ATC video.

    I wish you had discussed lead levels. I heard that domestic growers don't have those problems with lead contamination...so we are now faced with a choice of a lower lead and lower quality or I presume a higher quality and also higher lead levels. What's a cook to do?

      Arsenic is a problem with domestic rice. Soak it for 5 minutes and rinsing it gets rid of most of it. Also, cooking it with extra water and draining it.

    Living in Chicago I have a south Asian grocery store within a couple of miles of home. I've been buying Pakistani and Indian rice for a while, but I'll look for the Daawat brand now.

    Here in my village in west UP 🇮🇳 every 8 people out of 10 done basmati rice farming including my family companies and private players buy Basmati rice from us at cheap price and sell them at tripple prices in national and international markets after putting their brand name on packets , mediator earns more .

      You should look for raw rice. Not boiled rice. And there best trick- soak it in water for half hour, dump out the starchy water. When you cook, for every cup of rice, and two cups of fresh water. You'll get perfectly fluffy and not sticky rice.
      If you do need a tutorial, look for an Indian tutorial.

    In American cookery videos they do not wash the rice. How can anybody not know that rice should be washed and then soaked for some time to get fluffy long grains.

    i'm from eastern part of India where rice is consumed more widely and i can tell that dawat and india gate are the best basmati rice brands anyone can come across. my advice to foreigners if you see either one of these brands then quickly grab a bag!!!

      well on amazon anything with a lot of weight tends to cost a lot more as it costs more to ship. hence why in store is best for heavier items. and why if you keep supporting amazon, prices will go up as amazon wont let retail stores survive

    I have always preferred basmati rice for its flavour. To me it tastes “nutty!” Now let’s proceed to basmati rice with jasmine flavour. It’s my favourite all time rice. Over to you😋.

    Although the Lundberg basmati is no basmati given the grain is not long enough. and they don't look as nice as the ones from India, I still prefer it. We are Californians , since you can pick up significant amount of heavy metals from other regions, particularly other countries. I don't take a chance when the area where it is grown is often not listed. California has strict regulations and quality control. I forgo the taste and try to stay as safe and healthy as possible, beside, I support produce of CA.

    Great Basmati rice is sold for about $3,- for 5lbs at the Asian markets over here (Flanders, Belgium). I'm used to fresh produce being very expensive in the US, but dried goods? -you people are being scammed.

    You simply cannot trust this video and channel.
    Look at 0:19. They display 8 different brands, one of the world renown TILDA. And how many rice to taste on the table? Just four. They, intentionally, omitted 50% of the brands.
    0:12 "And Jack is here and is going to tell you which brand to buy"
    1:07 this frame is coming all the time. pay attention at the display. It's on the right. Why right? because the right is associated with good in our brain. and the daawat bag is in full evidence. 1:37 is also very clear about that.
    And look at the "cooks" in the background. More like paid zombies to fake cooking than anything else.
    That channel is a disguised infomercial and that video certainly paid by Daawat.

      @@danielw.7705 I used it for everything. It made wonderful rice pudding but I mostly used it as a sub for potatoes when I didn't have time to peel and fuss. It wasn't gummy or sticky but did tend to get a creamy texture if stirred.

      I love most starchy carbs (and it shows 😟) but I'm not a big fan of basmati rice. I actually find the aroma a bit off-putting. I prefer starchy, sticky rice, or my fave, arborio/risotto (tho I also love wild rice, which is def. not sticky). The creamier the rice, the better!

    The problem with brown rice is it goes rancid when the bran ages. Why are these not spoiled after a year? Or is the brand removed and thus the flavor added and removed for sale.

      Nope. Rice stores brilliantly for years. I've never heard of it going rancid if stored in a dark, dry place. We've had huge granaries in our country home where rice and other lentils were stored for years. There's never an artificial flavouring added.

      It's not the bran that goes rancid: 'brown' rice still has the germ a/k/a the endosperm, which has oil in it: have you heard of 'wheat germ.oil?' In basmati's example, it's 'rice germ.oil.' That means that it doesn't store well. Rice growers realized that ages ago and that's why they mill it, taking the bran off in the process as well.

    I purchased basmati rice that had been packaged in a burlap sack. The rice was inedible it tasted like burlap smells.

    Haven't tried this brand, but I bought 2 different Indian imports and both were bad unfortunately. The first had many bugs in it and the second was sour. Never seen this brand to try if anyone knows where to get it.

      If you find bugs in any grains. Spread it out it out in bright sunlight for three days. They'll be gone. Remember to bring the rice back in after Sun down to avoid moisture from the dew. My grandmother taught me this and I don't throw away any grains or pulses anymore.
