great video and great cooking result! Remarkable to be able to maintain 150 degrees with so little carbon, have you ever tried to reach 200 degrees and maintain it for an hour or more? Someone online complains about not being able to do it with PKs, it seems strange to me...

How long total was that? I watched the whole video, but I was confused at the intervals. 1 hr before bread pan and then 30 min longer?

I like to use a jaccard on the skin. Sometimes getting the skin transparent will make it burst open from the heat.

Started out thinking that looks like a lot of effort but end result looks awesome. Will have to give it a go! Nothing worse than taking a bite and the whole skin slides off.
