He shows you to build the drone in sections before placing components on the board because you are testing each component and learning before soldering all parts on the drone circuit board. Very important because the drone is a balance and complex system.

Using PCB for the frame is a great idea. Just to take your opinion, how we would integrate the camera onto the PCB, this is great as it saves me from 3D printing.
the voltage of the lipo drops with the capacity, and when the voltage drops, so does the 5V output. i added an voltage regulator from the lipo rail to 5V. because esc's without bec were mutch cheaper.

The 12A version from HobbyKing will work as well, it is just slightly heavier (11.5g instead of 6g). Although I haven't tried it, you are normally able to use 6-15A ESC's from other manufacturers as well, just make sure it has a BEC of 5V such that you can power the electronics and the ESC is capable of handling a 2S limo battery.
