I make a round spring-form cake any diameter you want. I have a few of them. I cool the cake, usually in the freezer. Then I take a long piece of floss, wrapped around the cake and pull it through. You can make as many or as few layers as you want. Works perfect for me every time. All layers are flat and a lots less work.

I just made a three tiered red velvet cake for my son’s birthday. I used an offset spatula to apply the cream cheese frosting and I got a really smooth and straight finish. My tip is to take time for this step and make sure your frosting is not too soft (pop it in the fridge for a while if it is). I cooled the frosted cake in the fridge before I added chocolate ganache for a drip cake. My son and my guests were impressed. I’m not a chef.

We made due but decided to freeze the cake in the freezer. (idk why we did it.) We both were afraid it wouldn't taste very good, but when we tasted it, we realized we had made a cake that tasted like chocolate chip cookies! we were both very pleasantly surprised, and my dad enjoyed his cake.

I’m a 14 yo baker and I’ve been making cakes for a long long time, coming from my advice, I absolutely suggest adding a crumb coat, so add a coat of frosting (a thin coat) and leave it in the refrigerator for about 20-30 minutes. This will keep the crumbs out of your final coat and give the Cake a better look
