I like this theory! Only things I’d note/question, Luffy splitting the sky by himself was an Anime Only moment, not to say he didn’t get a power up from gear 5th but from what we see in the Manga it doesn’t exactly boost his Haki in any noticeable way. I do like how you described the fruits themselves having Haki and when you eat it you get that power, it would explain the “level up” in general power that we see in characters after they eat their fruits

I do believe haki transcends death with for example being oden who was burnt alive and WB in marine ford arc.
