Amos is used to conduct structural equation modeling (SEM). Amos is an SPSS add-on and can be used to conduct SEM on data saved in SPSS data files (in addition to other file types such as Excel, .csv, etc). So, it's not so much about the data itself that is the difference, but rather the available analyses you wish to carry out on the data.
