Vietnamese Summer Rolls & Shary Tran Interview & Elevasian

I have always wondered how the various Asian country's cuisines found their way into other cultures. I hadn't realised that many started out as refugees in western countries. I love these summer rolls, which look very healthy and a great alternative to spring rolls.

Well, the Vietnamese came from the Chinese thousands of years ago. I learned this as a kid in Vietnam in the 70's. Two famous sisters led a rebellion. Escaped south from China & eventually that's how Vietnamese came to be. My journey to the USA is similar to Shary Tran.
When the commies took over, my dad was an officer in the South. He had to escape or else he would died. So he, my mom, my sister & brother came to USA on a military ship. I was left behind in Saigon with my grandparents because my grandpa wouldn't release me to my mom. Eventually, my grandpa & I escape on grandpa's brother's boat in the middle of the night. I was 10 in 1979. There were about 20-25 of us on a tiny lil boat. Got robbed by several different Thailand fishermen (pirates, that's why I hate them to this day). Made it to Malaysia. Stayed on a refugee island, Bi Dong, for several months. Fun times as a kid, exploring the island, waterfall, beach. Eventually we flew to Pittsburgh, PA where I begin life anew.

Vietnamese food is one of my favorites so I enjoyed this one a lot. Ms Tran was articulate and expressive and a joy to visit with. Lot's of big community events for foodies. I've made these traditional spring rolls before. It's a lot of work prepping but all worth it in the end.
