  • Hi guys! Welcome back to my channel. My name is Airam pronounced like “Eye-rum.”
    Today’s video is another 30 minute recipe! I am showing how to make my favorite side dish growing up, Mexican Rice!!! As many of you know, mexican rice is usually not vegan because it is traditionally made with chicken bouillon. Today I am showing how some alternatives to that, but keep in mind that if don’t have access to any alternative you are more than welcome to replace it with salt to taste! The star here is the tomato/garlic/onion, that’s where the true flavor lies. Mexican rice is traditionally “fried” for 5 minutes & then you pour in your homemade tomato sauce, then the KEY is to bring to a high boil for 5 minutes & reduce to a simmer covered for 16 more. Do not open!!! Let rest after you turn it off. A total of 26 minutes for the rice to be done from start to finish, not counting the tomato sauce blending process which is super easy peasy!     Ingredients used today:
    1 1/2 Cups Jasmine Rice
    3 Tbsp Oil
    3 Raw Tomatoes
    1/4 Onion
    2 Raw Garlic Cloves
    3 Cups Water
    1 Tbsp Better than Bouillon Vegetable Paste
    1 Tbsp Orrington Farms Vegan Chicken Powder
    1/2 Tsp Salt or to taste

    Finally made this today. My 3 kids and wife loved it. It's gonna be a regular in this house. Thanks again. My tofu ground beef also came out great(credit to thee burger dude). I love people like you guys make our lives easier, and full of flavor.

    I made this for my coworkers today. They all loved it and it's seriously the best rice I've ever had. I didn't have the chicken powder so instead I added a little bit of cumin and lemon pepper. Also some cilantro. So amazing.

    I can’t believe I’m barely discovering your videos! Thank you for sharing your recipes. I wasn’t taught how to make Mexican dishes growing up being 6th gen. So it’s been a journey discovering them. It was intimidating & I didn’t have much experience with authentic recipes before going vegan. I’m so excited to try these recipes & keep learning. 💞

    This is the best Mexican rice I've ever made! My other tries weren't even vegan and were not as good. When I tasted at boiling point I added salt and a little black pepper. I also used homemade vegetable bouillon instead of store bought. For this reason I added an extra clove of garlic to be sure my seasoning would shine through. And at the end I added a few sprinkles of cumin. It turned out perfect! My sweetie even likes it and he's a picky eater. Thank you very much for sharing!

    I've been making refried beans, and now I can finally have some delicious rice with it, too. Thanks for these easy to follow instructions.
    I'm going to try making ground beef with tofu to complete my Mexican meal. Hehe
    I want to make bean n cheese pupusas someday.

    Bomb! Def gonna make this. I think I am going to also do what my mom does and then add about a cup of frozen veggies (green beans, peas, corn and carrots) in the last 6 or 7 minutes. Of course veggies should be thawed for a little while and rinsed before adding at the end.

    This is exactly how my family makes it ! I love how you cook all of the traditional meals I grew up eating and “veganize” them 😭💜 . This is normally how I make my vegan version except I used the garlic better than bouillon base cause I have a hard time finding “chicken”. But I’ll be on the lookout for the powdered one you mentioned!

      Yes! I’ve tried that garlic bouillon too and it’s so good. I too have a hard time finding the chicken bouillon in store so I always opt out for the vegetable hehe thank you for your kind comment, I appreciate you!!! 🧡✨

    Can lie homegirl, this helps for lent when I can't use chicken broth, I was just using vegetable broth with tomato sauce and carne asada rub for the salt and it come out good but it's not the same lol

    I've been using Knorr Vegetable Broth powder...which takes very chicken-y. Almost like the packet of chicken flavoring for ramen noodles.

    Which base/powder do you recommend the most as replacement for the chicken bouillon?

      Sooo there are two forms! You can buy a bouillon that’s a paste or powder form.
      For the paste kind, definitely the most accessible would be the Better than bouillon vegetable base! So I tend to reach for that one the MOST. They also have a vegan chicken base which is great too. Just harder to find.
      And as far as the powder forms, I love the Orrington farm vegan chicken powder.
      *Someone also mentioned that Knorr makes a vegetable one too. I’m yet to try it but it was recommended in the comments!
      Hehe at the end of the days all of these should work well 💕

    Also, if anyone is interested in making their own faux chicken bouillon here is a recipe I use to make it. Really good! Its a lot of ingredients but totally worth it IMO. thelemonapron.com/faux-chicken-bouillon-powder/

    Growing up we didn't use chicken bouillon so I'm actually shocked to learn most ppl use it. I personally like it fine without chicken bouillon, especially cus chicken flavor makes it more acidic
