Hey...my icing curdled midway while mixing with a hand mixer...I continued mixing but the whey started separating...I'm guessing it's due to the addition of lemon juice and milk...what are ur thoughts???...and can the icing be salvaged after keeping it in the refrigerator for sometime and mixing again?

I use true lemon packets if I do not have lemon, even if do I’ll add for a lemon punch! It’s the best, I keep lime,grapefruit,orange for my anytime flavoring for cakes,drizzle recipe or even flavoring cookies ,drinks etc.
Homemade cakes and pastries always taste better than stuff in a packet... I tried several of starbucks pastries and cakes throughout the years and I'm not impressed with any of them. Very generic stuff you can get from your local grocery store... this lemon cake that you made looks delish.. thanks for posting 🙂
I personally prefer the taste of lemon extract in baked goods because lemon juice burns easily and ends up being more acidic tasting than un-baked fresh lemon juice. I'd opt for lemon zest + extract in the loaf and lemon juice + zest in the icing. Just my opinion but I think leveling up the icing with cream cheese sounds amazing!
@@hsf8908 It's a very light lemon taste, and the best thing is it's not too sweet. I think the yogurt really helps, I've tried so many lemon loaf recipes, this one seems to be the best so far.
White Lily has a boxed lemon loaf mix that tastes absolutely superior to Starbucks. It did not last long in my house at all. Just add water, a stick of butter, and an egg 😊

personally, I wouldn't. The yogurt is important as it ads texture, rise, and moisture. Happy baking. I'm making this loaf today. It looks so good!
