Lahori Chikar Cholay - Oil/Ghee is not used in this Lahori chanay recipe

- Ingredinets:
Chickpeas 500g (soaked overnight)
Salt 1tsp
Water for Boiling 4-5cups (depends on flame)
Red Chili 1tbs
Garam Masala 1/2tbs (if store bought)
Garam Masala for cholay:
Star anise 1pcs
Cinnamon 2 small pieces
Nutmeg 1 small piece
Mace 1 small piece
Black Pepper 1tbs
Black Cardamom 2
Cloves 10
Grind and Use 3/4tbs of this masala with below spices
Coriander Seeds 1tbs
Cumin Seeds 3/4tbs

Fun fact: chikar stems from Chikar with the consonant 'ळ"
Punjabis (both side), Gujjars, Rajputs and Marathi use it rolling the tongue, so, it's pronounced as chika-r(rolling the R sound that wretched, write words would! It's just indigenous to India and Pakistani speakers and that in just a few pockets of lingual groups here.

Years ago, my dear uncle use to make chikar choley for his shop. I remember the in a large pot he has his shikar choley had lots of oil and chillies onion rings
