Since the meat slices are usually very thin when eating hot pot. When the soup is boiling, you only need to put in the beef for 10-15 seconds, pork for 20-30 seconds, vegetables for around 3 minutes. If you order chicken, they usually come in chunks. You might throw them in the pot and let it boil for around 3 minutes. And use that big metal spoon thing with holes more often to fish out the lost items. Hope you guys will enjoy hot pot even more next time. Also, the reason they put in sesame oil in the condiment is because the sesame oil can neutralize some of the spice so you can eat more.

I'm glad you made a brave attempt. Here is a little tip. After touching raw meat with chopsticks, it is best to put it in the pot and cook it for a few seconds before using chopsticks. All locals do this to avoid diarrhea. Or you can ask the restaurant for an extra pair of chopsticks dedicated to raw meat.

Finally, I've seen a blogger who used the right dipping sauce for their first hot pot experience. You guys are awesome. I've seen many other foreign bloggers eat directly from the spicy pot on their first try, and that can be extremely spicy. The correct way is to dip the food in the sauce after taking it out of the spicy pot. That's the proper and delicious way to enjoy it.BTW, the tomato pot doesn't need this step.

People tend to make up their own dipping sauce; there's usually a table full of different condiments and sauces so the diners can help themselves, but you weren't to know, hence the waitress did that for you.
As soon as the meat changes its colour, it's cooked, usually less than a minute.
Apart from the vegetable and noodles, pick some seafood too next time, such as prawn and squid.
    Love your videos 👍.

Fortunately, you chose a yuan yang pot, so the spiciness won't be too overwhelming right away. You should wait until all the base ingredients you see have completely melted and the pot starts boiling before you begin eating. Different foods require different cooking times. For example, thinly sliced meats cook quickly. You can use chopsticks to hold the meat in the broth for a short time, and once the redness disappears, you can take it out to eat. Cooking it for too long will make it tough and not as tasty. Visibly, you both look much more relaxed than when you first arrived. Your smiles are radiant. Thank you for visiting China.

You can also try mushroom combo if you like. Don't need to order spicy soup base. Just tomato or other non spicy is good. As others already mentioned, dip thin meat in the soup for 10 seconds. Vegetable can be cooked a little longer like 5 minutes. The better way to eat hotpot is to have more people, You can order a lot of varieties. Everybody can try everything. Very fun.

Amazing guys! The sesame oil dip source is very common when having Sichuan hotpot. It takes some chilli oil coated on food away to protect your mouth and stomach, while all the flavors remain.

the bottle of tea you guys drunk when you were eating the hotpot,it's a traditional cold tea in china, and it's a partner with the spicy hotpot. the spicy could burn your stomach, and the tea could let it cool down

Damn you guys are the first foreigners I saw having the “right” dipping sauce among all the videos 😂😂 the sesame oil helps cooling down the meat (like oil quenching) and reliefs the spiciness

Tofu, taro and lotus root are also good for hotpot, fish ball & meat ball are good too, and you don’t have to cook(boil) them for too long, a minute for tofu, a few minutes for taro and over 5 minutes for the lotus roots, fish balls and meat balls. As for those slices meat, less than a minute( around 10 to 20 seconds is fine).

Nice! Beef is definitely the one to try first for this type of hotpot. If you ever go to Beijing, don't forget to try the traditional Beijing copper-charcoal hotpot with freshly cut lamb, which is not spicy by default. the Sichuan's broth even just mildly spicy is spicy enough for a lot of people(and myself).
So, A few recommendations of my favourites.. just in case if you guys ever wanna try the same hotpot or different hotpot again.
Vegetables: potato slices (土豆片) Shungiku/Chrysanthemum leaves (茼蒿) corn (玉米) cabbage(白菜) lotus root(莲藕) enoki mushroom or mushroom (金针菇or蘑菇) black fungus(黑木耳)
    Meat(or kind of): duck/pork bloody pudding(鸭血/猪血) fish tofu(鱼豆腐) shrimp paste(虾滑) fish/meetball(鱼/肉丸子) hairy tripe(毛肚) raw shrimp/prawn(虾)
    Other: noodle/instant noodles
    Hao Chi!

There are various hot pots in different parts of China, such as Sichuan hot pot, Beijing lamb pot, Chaoshan beef pot. I think the vegetables in Sichuan hot pot are the most spicy, will absorb a lot of spicy oil, if too spicy, rinse with water, it will be much better.

When we eat hot pot, usually we would order about 10 kinds of foods including 2~3 kinds of meat (beef/lamb), 2~3 kinds of sea foods(shrimp, fish slices), 2~3 kinds of mushroom and 2~3 green vegetables. That's the way you have a full experience of hot pot. Some restaurants supply special hot pots such as special fish or rabbits or bullfrogs and so on, if you really love hot pot, don't miss it.

Beef and lamb slices are quickest to cook, done in seconds. You eat it medium when the meat is slightly pink. Next time if you try pig brain 🧠 it will take 10 minutes slow cook. For less spicy you can take out half the red chilli 🌶 at the start and put them in a bowl. You can add them back if you want.
