Use a wet / damp kitchen towel on your table and place it around your bowl. Helps a lot with hand mixing and keeps the bowl in place. Hand mixing is no joke, quite the workout.

Caserolle of Chile Relleno is new to me, doesnt sound bad tho, Here in mexico we eat them as a single dish, with rice and tortillas. And the chilli itself is often filled either with cheese or ground beef.
