As a French Guy. The real advice I can give you is : never beat eggs with a whisk. Do it with a fork, so it’s not entirely yellow, but it stays a little bit of white in the texture. It gives more relief to it. And add the fresh herbs directly to the melting, with some pepper. Also, don’t cook it with butter, but use a little bit of oil instead, and you can also add mushroom by cooking them in the pan then add the eggs
