  • Winter is coming but the pepper plants don't seem to know that and just keep on producing. Today I am working on getting some of these peppers stored away for the winter.

    I heard this guy talk about planting in the backyard while wearing a pro-gun shirt and I subscribed. I knew he was going to talk about the plants and not the emotions of the plants, "wild water", or anything about the spirits of nature. Real gardening, real info, that's what I want.

      @@ihatehers it's hard to research plants I like without hearing of the magik (spelled with a K) of the plant or what the plant represents on a spiritual level. Personally, I don't care what the spirit of the plant wants, but it seems that half the internet does.

    They don't want you to wear your shirt, but everyone seems to have an opinion. I guess only they are entitled to an opinion. Great video, and a big help. I have only canned pickles before, and it was rough. I do have the dehydrator.

    Love the shirt. You may have mentioned this. To prevent liquid volume loss in jars, let them sit for five to seven minutes in the waterbath off the burner, then it's ok to remove them from waterbath. I learned this a couple years ago while beginning pickling.

    I'm shocked at how well my peppers did this year. I live in a zone 4. We've dipped down to freezing a couple of times, and my peppers are still going strong and producing flowers. Thankfully, they're potted, so I'm going to bring them in when it finally does get super cold and see if I can squeeze a few more from them.

      You should be able to. I love having peppers in containers for that very reason. I often get fresh peppers until January.

      Leave them in the house in a basement if it’s a little cooler. When your done with the peppers cut the plant back and water lightly through the winter about once a month. Take the pepper back out when warm enough in the spring and it will grow and produce again in the spring.

      I think so too. The common recommendation is to use them within a year but I don't hold to that too strictly myself.

    Can you still dry them if they've gone slightly limp? I forgot a few on the counter for a week

    Question: You say we should dehydrate them at 100 F, but my oven does not go below 150F. Would that be too high?

      Sorry for the slow response. I haven't actually tried dehydrating them at that temp but I don't see why it wouldn't work. Just leave the door cracked open.

      Yes I’ve done that with oven and door cracked for about 12 hours. We will get dehydrators soon! Putting that in the universe for us

      If you live in a low humidity climate or you can wait for that kind of weather you can sun dry, cover with cheese cloth if you have bugs.

    Thank you! Good timing :-). I use “living technique” when drying raw foods.. Basically, 108*F keeps the enzymes intact, so better nutrition :-).

      It’s any temp under 115 degrees to maintain the enzymes.

    What about banna peppers. I like to suck the juice out of them when I’m eating a sandwich and eat half of it. Lol do you have a good recipe for flavoring? I wish method is best.

    Is the boiling done to seal the bottles? If I don't have those rings to seal the bottle, could I just store cayenne peppers in bottles without boiling? Would it last for long? Or is the boiling done to cook the peppers?
    I don't have that much cayenne peppers in the garden, If I decide to pickle some of them, maybe, just half a bottle or even less, would I still be using 2 1/2 cups of apple cider/white vinegar? Or maybe use the ratio and proportion method? Can I use cane vinegar?
    Why can't we use iodized salt? Is rock salt ok?
    It's my first time to watch your video and I find it really educational. It's been too long that I want to learn these things. Maybe next time, you can teach us how to make chili garlic sauce.

      If you use a smaller jar, proportion the recipe accordingly.
      Iodized salt is not natural, most people try to put healthy stuff in their jars, especially with fermentation.. to help fermentation.
      Any vinegar, acidity and salty brine would work. You want low stable PH to prevent molds.

      Mold can’t grow below freezing. Not normal plant mold, anyway.

    What is the best recipe for keeping the original flavor and taste of the peppers in the jars? Can one keep the peppers whole in the jars?

      Good question. There isn't really a safe way to can peppers without adding vinegar or some other kind of acid that will definitely alter the flavor. If you want the flavor to stay the same the best way is to either dehydrate them or freeze them.

    Since you didn't isolate the pepper plants won't the seeds collected risk the chance of cross pollination and not be true like the parent peppers?

      I have never had that problem. I guess it is possible but it has never presented itself in my garden.

    Put 1/2 to 1 cup vinegar in your water bath to keep your jars from getting that crusty build up

      Once the jars seal you no longer need the rings.

      The only reason you remove the seals is so you can tell if the seals are broken overtime. I've seen people flip the jar after removing their lids to check if the seal was tight.
      Your answer is like me asking "why the sky is blue" and you reply with "because it's blue" , haha.

      These are habaneros. I do have some habenadas that look exactly the same. I have to be careful to keep them separate from each other or I get them mixed up and my wife is not too happy with that kind of surprise.

      Every ripe habanero I've ever seen was orange. I live in Texas and spend lots of time in Mexico with Mexican In-laws.

      full ripe habaneros will be the color the strain is, yellow, red, chocolate etc

    If you pickle them, (boiling vinegar and salt) you don't need to can them (pressure cooking or bath). Refrigerate after opening to keep them fresher but even that's not necessary.
