Living in SW Louisiana, this is such a delicious and easy recipe, however we make it with some good Cajun smoked sausage. Simply enough we call it “sausage & potatoes” so quick & easy. Grab a fork, & some French bread. 😋

*THIS IS NOT ANY SOUTHERN RECIPE THAT I AM AWARE OF. THESE ARE YANKEE TATERS MA'AM!:* This is the correct way to cook southern style fried potatoes. You peel and slice your potatoes, then rinse them in warm water to remove the extra starch. Pat them dry and remain warm/room temperature. Heat a cast iron skillet with 1/4" bacon grease until the grease reaches its smoking point then add the potatoes and quickly stir them coating them in the grease before placing a lid on top and reducing the heat to a medium heat. While the taters cook in the bacon grease cut your onion into mid size chunks to add to the taters later. After 5 minutes frying on medium heat raise the lid and stir the taters quickly and replace the lid. Go 5 more minutes and remove the lid, stir, add the onions and some salt and replace the lid. Go 5 more minutes and stir, add another pinch of salt, add pepper to taste, replace lid and cook for 5 more minutes. This is "southern style taters and onions", always has been. Pepper will burn in the pan while cooking so you never want to add pepper while frying until the very end. Garlic will do the same. I'm not saying your potatoes would not be delicious, I am saying your recipe is not traditional southern cooking. Bon Appetit mi amigo

I've found that chilling potatoes turns them sweet. Is this the same as Smother-Fried Potatoes like Brenda Gantt cooks? I've never had them.
