Furthermore, they are constantly experimenting with the metal they use to create sharper and more durable edges. I highly recommend them if you are looking to spend some money on knives. Agreed! However, as sushi chefs we are should be masters of the knife. Furthermore, we use this technique to cut avocados for caterpillar rolls. Make this into a tutorial if that is something that interests you.
