    You can get vinegar and plain salt at fish & chip shops here in Australia, but a slice of fresh lemon to squeeze on the fish, and chicken salt generously sprinkled on the chips is much more commonly asked for. Most fish & chip shops here do pretty reasonable burgers of various types (beef/chicken/fish).

      I only get vinegar if I know they're using a good malt vinegar, which pairs marvelously with chicken salt.

    Hoki (pronounced hoe-key) is a New Zealand fish. When I worked in a cafe and then later a Steak House, we sold a lot of Hoki, Snapper, Cod, and Red Emperor. In Australia, we do crumbed, battered, and grilled at some places.

      Minor correction, I believe the word hoki is the New Zealand contribution. The fish itself respects no national borders, lol. In other places it's known as blue grenadier.

      The presence of many ex-pat Kiwis, living in Randwick, may explain the availability of Hoki around the Sydney beach suburbs.

    Australia being a truly multicultural country you can go to all sorts of fast food places . Most of your Greek fish and chip shops also sell Suvalarkies and pickled onions as well as big juicy burgers. Then close by you might get kababs , next door Chinese , Korean, Pizza . We have all the usual chain store fast food but there are far more family run little shops which is great as its a good place for kids to get their first jobs . The quality of our food is really high because most of it is locally sourced. People would ask for Chicken salt eight out of ten times . Its the bomb.

    So this will aurprise you but fish and chips in Australia didnt come out with the first fleet. The first fish and chip shop was opened in Sydney in 1879 by a Greek migrant tho he possibly copied the idea from a Welshmans shop nearby. Greek run fish and chip shops were the mainstay of takeaway shops in Australia right thru the 50s 60s 70s 80s 90s til the foodie movement took off and changed things. There was a chinese restaurant and Greek cafe/fish and chip shop in just about every country town. Theres still good fish n chip places but more upmarket these days. And our fish is different to British/North Sea fish.

      Greek people ought to come here to Australia and open up milk bars and fish n chip shops. As a kid I remember Greek owned shops and they were the BEST. I think if they came back again, just like the originals, they'd be ultra popular. I remember that the Greek shop owners were friendly and always laughing and joking.
      How can the Greek migrant you mentioned have the first fish n chip shop if he copied a Welshman's shop nearby?

    Chicken salt isn't chicken flavoured salt. It was invented to be a seasoning that you put on chicken.

      No, it's not. Yes there is some chicken stock in the mix, but Mr Brinkworth, the inventor, describes it as....
      "Chicken salt was made as a condiment to flavour a cooked chicken; it had nothing to do with the flavour of chicken in the chicken salt.
      "It was not one of these fancy salts to add the flavour of something else, it was just a condiment to flavour chicken, and it went from there."
      And no, there is no curry powder in the original recipe.
      Mr Brinkworth said any colour in the salt should be reddish and come from the paprika.
      Mr Brinkworth described his amazing discovery as a "simple, natural thing" that happened when he was cooking chickens for his retail food store in Adelaide.
      "Instead of putting salt and pepper on them, I made up a mixture to just sprinkle with one go instead of using a dozen different containers," he said.
      "It was just out of laziness more than anything.
      "There are a hundred recipes out there today and they all reckon they're good but mine has salt, chicken stock, MSG, paprika, garlic, onion, celery, some herbs and spices.

    In Australia, we don’t just do Fish and Chips, we sometimes do Chicken and Chips (often in a Snack Box, a small KFC type box), Steak and Chips (generally at a Steak House), and sometimes Beer Battered Chips. Although I am sure you guys also do Beer Battered Chips.
    Ps Chicken Salt is the GOAT of seasoning.

    There was no spicy rice on the burgers there was lettuce, tomato, grated carrot, sliced beetroot and the piece of chicken/fish

    Seen a few TV shows where filmed in a chippie in England, where they dunk the fish fillet in the batter raised up to drain off the excess batter then place the battered fish in the oil. In Australia pretty use the same process except between allowing the excess batter to drain off and then running the thumb and finger down the fish to remove excess batter before putting in the oil.

    I’m Australian, I’ve had fish n chips in England a few times. I don’t have cod here, usually flake but besides that our fish n chips are not as greasy and soggy and I can’t remember if they had potato cakes in England. And then the fish n chips you get in restaurants and pubs is different again.

      Yeah i would say in terms of quality they are the same. But aussie is better more often.
      If you go to the best fish and chip shop in the UK. It compares nicely. But on average the aussie ones are much better. Fresher fish is guarunteed, and aussie shops tend to have more variation in ingredients.
      Really good Chippy near me in Perth thats run by an asian family. So they also do oysters and a few other popular dishes from asia but in an aussie style. Youd usually not find that in england. Which is a shame because the UK used to be very Big on seafood historically

      Had the most tender and large calamari in a chippy in St Kilda in Melbourne. Best if the shops near the coast buy locally... the don't always.

    There is currently a strong push to make a defibrillator available within 5 minutes, everywhere in Australia.
    It's based on the efforts of Greg (yellow Wiggle) Page, who was saved after a heart attack by use of a defib.

    lol My first deep-fried Mars Bars here in Australia was at a Japanese restaurant. It was served with vanilla ice cream, and I almost died eating it by myself. I highly recommend sharing it!

    I remember during the 90's, an english tourist amongst a mob of others shouting excitedly. " Look a fish and chip shop! I didn't think they would have fish and chips in Australia, so on the Friday before I left I bought a huge lot of them, so I wouln't miss them,, and I made myself sick!"

    Fish and Chips in Australia is traditionally Flake and Chips, Flake is actually Shark- Gummy Shark- but they were overfished and now there are strict regulations. So the fish component has diversified into many different varieties of fish. You can tell if you have Shark, or if the fish and Chip shop supplies shark by the strong smell of ammonia in the store. Make no mistake, this is not because the store is fastidiously clean but because sharks don't urinate. Instead they store urine in their flesh. The older the shark, the stronger the ammonia smell because they have stronger concentrations of urine in the meat. All that being said, flake is my favourite and what I grew up on. Beer batter is good as it is thinner and crispier, but traditional thick crisp on the outside and leathery batter is also great. It really depends how it's done and what sort of fish is being used.

      When I was growing up in Melbourne flake was coastal school shark, as against ocean caught pelagic sharks, and they were over fished. Then it was discovered that school sharks had high concentrations of heavy metals and flake began to be less common. I'm sure that many shops sold 'flake' that was another type of fish as consumer laws were nowhere as strict as they are now. I remember in the 1980's when it was found that restaurants were calling fish Barramundi when it was actually Sea Perch. I was at a restaurant in Coolangatta where the Specials Board had Barramundi erased very badly and Sea Perch written over it in chalk.

    I've just come back from the UK. UK fish is almost always cod - it's totally flavourless, absolutely terrible. Aussie fish has flavour,.

    Yep Fish and Chips are amazing here in Oz but the Fish and Chip shops can be bettered...
    I grew up going camping in secluded coastal areas where we took bouts out and did deep sea fishing catching Pink Snapper, Dhu fish, Breaksea cod (nothing like the northern cod) and Nannygai.
    Then back to camp and using the old cast iron camp ovens we would cook the fish and our own made chips.
    Nothing can compare to this from a shop but to be fair they also cant get the fish as fresh as this.

    G'day Mate! So...Chicken Salt...Back in the 70's a take away chicken shop owner wanter a better and different seasoning to sprinkle on his roast and rotisserie chickens and he came up with a salt and spice mixture which we know here as Chicken salt...There are several brands on the market now but nothing beats the original Mitani brand Chicken Salt They purchased the original recipe about 50 years ago... Cheers!

    We don’t have cod here. The fish and chips are better here. We have a choice of fish so you can have your favourite one. 😊 no rice in the chicken burger, it’s just salad, lettuce, tomato, grated carrot, beetroot.

    Had fish ( battered cod) and chips from a recommended shop in London and couldn’t understand the hype, pretty ordinary compared to Australian fish and chips, and left me feeling ill from the grease. Then had it again in a small coastal town in Spain, cooked by a Spaniard, and it was wonderful. The difference was definitely in the cooking.

    Yer I'm go into Anaphylaxis just watching this. My lips are tingling, I feel like I could swell up at any second. Damn I hate being allergic to seafood. Chips have to be covered in chicken salt. Generally speaking we have a couple more burgers done at the chipy. The works burger which has the lot on it, out of left field they put beetroot on it. Not my thing but each to their own. & how could anyone forget the good old steak burger (with an egg). That's got my mouth watering.

    As in the UK last year and I tried fish&chips...not once but twice. Greasy, limp, soggy and tasteless. No comparison to Au ..sorry but true. So a nice surprise for you when you come over. You'll be really impressed.

    We eat Gummy sharks here ....or Flake, as it's known.....absolutely delicious. Also potato cakes (scallops), battered sausages, Pineapple fritters, and Banana fritters. Bloody lovely.

    Im a kiwi in Australia and the fish and chips are different, you usually get butterfish which is foul, but I order flake which is what you get in NZ. Flake is shark. Yummm, Chicken salt is divine, it was invented here in Adelaide and the Heart Foundation recommends it bc its low sodium.

    I still love fish and chips on the rare occasion I get it. As I grew up in the UK but I remember that Indians ran my local chip shops and I must admit in comparison to most others it was the best. Yet they’re all good here and that’s all I can say, I haven’t had a bad fish and chips in Australia ever. These are the stores that also normally do the best burgers fish, chicken or beef preferably with the lot. I’ll normally ask a local whenever we pull into a country town as they’ll willing tell you who’s the best, did that at Goulburn NSW once 1/2 way between Sydney and the 🏔 snowy mountains, which used to be the major stopping point. Drove past 5-6 similar establishments to an Islander run business (first one coming in from Sydney on the right).The burgers are to die for without a shadow of doubt. Fredo Pies at Fredericktown also now bypassed on the way Brisbane from Sydney has the best pies, and also worth the 2 min detour off the highway when it’s open. NSW in Oz

    The fish & chips shop near me sells a lot of things, but their chips are ... not great.
    The fish is top tier though. Especially if you go with some local fish (therefore super fresh) like Barramundi or Flake.
    Personally, my favourite thing on their menu is a steak sandwich with the lot.
    Yeah, that's that wait what moment.

    Love eating fish and chips by the beach, river or lake. Flake, potato cakes, dimmos (steamed or fried) and chips.
    Lived in Norwich, England for two years during the 1990s. Used to drive up to Cromer on the Norfolk north coast and buy some fish and chips and sit overlooking the pier/theatre, even on a cold windy day. Not a fan of vinegar on my chips, wouldn't eat mushy peas either. Love chicken salt.

    Personally, I think both countries have something I'd consider weird going on. I don't understand the Brits with their mushy peas with fish and chips. They wouldn't exactly be crisp anymore. But then I don't get what my fellow Aussies see in putting beetroot on a hamburger. Oh, well, to each their own.
    Whenever I think of when fish and chips first started in England. I imagine all of the local cats 🐈 congregating outside, tempted by the smell, and hoping to enjoy some scraps. Our cat's favourite treat of all time is the pieces of fish we give him, whenever we have fish and chips. We have a different f word around our house. Call his name and offer him some fish, and he'll come running. Doing his impression of a cheetah 🐆. Cats will come when they're called if it's to their advantage.

      Pickled beetroot occupies the same niche as pickled gherkins on burgers. Sweet and sour. They lean a bit more sweet, and slightly less sour than gherkins. If that's not your jam, then obviously you won't be a fan. Salty-sweet is a winning combination in general, and sour can do magic to a savoury dish. So it makes culinary sense. But as you say, to each their own.

    You won't get crappy Cod you will get King George Whitting, Butterfish/Mulloway, Garfish, Snapper, Flounder and many other types. Though it will depend on where you go and Mitani Cheicken salt for me is the best.

    We usually have fish crumbed and you have to ask for battered (I learnt that quickly when I went to the UK and Ireland) Chip shops are well known for 'real' hamburgers too. Watching this makes me want a hamburger and chips XD

    To hell with the vinegar! Chips should be crisp on the outside and light and fluffy on the inside. Vinegar would just make them soggy, all the way through.

      It actually originated in Scotland. We took the idea from them. Mars Australia is not an Australian company - it’s a wholly owned subsidiary of Mars Incorporated (USA). 😊

    Hi mate, I like your vids but please try my home made Fillet of Fish from Maccas with tomato. Get a Turkish bread roll, bake the number of fish fingers that fit on the roll. Assemble the roll with tartare sauce, place sliced cheese on the tartare, fingers on top of the cheese so it melts them and sliced tomato on top. Salt and pepper and enjoy that bad boy, much better than anything you'll buy. Keep up the great work and I hope you get to Oz one day, we have an amazing place. P.

    Hardly anyone has vinegar on their fish and chips over here. I'm originally from Scotland and Australian Fish and chips is far superior to british soggy fish and chips. McDonald's fillet of fish is disgusting compared to a proper fish burger

    No way could I stomach cod that was all you got in the Isle of Man and its manufactured into a weird shape..the.best fish ever is haddock from Scotland. We do shark here in Australia and its flaky and lovely but you won't see a big jar of pickled onions on the counter..now that I miss.

    I have an English friend (Greater Manchester) and he says he prefers the English chips because ours are, to him, too "dry', i.e. we cook them in hot oil quickly, so crisp and not greasy (he likes greasy). But he does say we win hands down on the fish for taste and freshness.

    8:19 there’s a fish place in Fremantle WA, called Kailis - they run their own fishing fleet, and sell fresh fish almost straight out of the boat. Their fish burger is basically a battered fresh schnapper fillet with minimal lettuce and tartar sauce - chef’s kiss!
    Another place a bit off the beaten track is Finlay’s Fish BBQ in Kalbarri WA. Due to a pilots’ strike, they were unable to get their seafood out in a timely manner, so they opened up their own seafood eatery - everything goes from boat to plate, same day.

    Many better places than this place...I have also had fish and chips in Hong Kong, which is more like British Fish and chips and a bit on the soggy side , it is MORE crisp in Australia. I also ( sometimes) cook chips in The Philippines, but they just dont cook the same, not sure if its the oil, the potatoes or what...but they burn too easy, not cooked through and , well are just no good. Not that great in Thailand either. Strange thing , Fish n Chips, the ones at Paddy's market in Sydney are GREAT!

    All our fish and chips in Australia are cooked fresh to order. In the UK you get whatever is already cooked.
    I asked a chippy in Scotland for fresh chips and he refused, told me if “if you don’t like it leave”.

    Australian’s do have fish and chips. We had it every Friday night growing up and I still have it but in a healthier way. You couldn’t pay me to eat KFC or any other fast food chain. Yes, we do it better than everyone.

    After living in the U.K for 5 years I just found the fish & chips places dodgy 😮! Just seemed unclean, the oil that they were cooked in was a few months old & just didn't taste the same as back here but hey give me a bangers & mash English style anyday 😊! The chicken salt is almost like the salt you get on your chips at KFC!

    Proper chicken salt has no chicken in it, it's a seasoned salt originally developed to season rotissary cooked chickens.

    I still cringe as non-Americans calling chicken sandwiches as "chicken burger". If it had a hamburger patty on it, it's a chicken burger. If it's just chicken, it's not a burger.

    I'm not a huge fish fan, but sometimes indulge; for a good chicken burger or even hamburger (beef pattie), most local fish n chip shops would knock the big burger joints out of the park like HJs and Macca's, they're exactly what you saw for the chicken and fish burger here but just beef. I went to the UK in 2014 to visit a mate, we had fish n chips for lunch and I asked for chicken salt on my chips and the store fell silent and stared at me......got to say, Aussie fish n chips shits all over UK fish n chips.

    Sydney Fish markets great for fresh fishnchips your fish was swimming in the Pacific ocean that morning. there are many types of fish and shark you can have much better then Cod in the UK and its not greasy.
