The reason you couldn’t get a side of Alfredo is because authentic restaurants make the sauce by putting wine cream and chicken broth in a pan with pasta water and cook it down and reduce it until thick and creamy, it’s not in a can like Olive Garden lol

I’m an old PDX boy, best Italian food ever was Lido, mama Limma and her weird son Frank ran that little place for ever. It was right next door to the Monte Carlo another Italian night spot, but their food came from Lido.
I grew up in an Italian enclave in SE Portland , most of my Italian friends swore by that place.

Cottage cheese is an Oregon thing!! My mom used to make lasagna with cottage cheese instead of ricotta. My siblings and I used to throw it in the spaghetti sauce every time.

I recommend to try using ricotta instead of cottage cheese sometime Chael, it's a preference thing that I prefer one over the other that I feel you should also experience, and it also is only *slightly* more authentic than cottage cheese. Gang shit onward

I like spaghetti & I like cottage cheese ,I won't say anything till I try them together. Years ago I tried Hawaii pizza,pineapple on top of ham.Its now my favorite topping.Vermichelli( thin spaghetti) thick sauce,I like to cut up & brown some keilbassi w/ mine.You're right though Chael ,spaghetti ,fried chicken needs to be made at home.Olive Garden has some pretty good lasagna.
