The Ultimate Smoked Beer Brats Recipe

- Welcome back to Anderson's SmokeShow! Today we are going to smoke some Beer Brats on my Camp Chef pellet grill! The perfect game day recipe! Check it out!

For this recipe you can use sausage or bratwurst. I visited my local butcher and picked up some fresh made Hungarian Sausage. In a 9x13 foil pan I added 2 chopped onions (1 white and 1 sweet yellow), 2 bell peppers (orange and red), several cloves of minced garlic, salt, pepper, basil, and about 30oz of beer.
I set my Camp Chef SmokePro SG24 WIFI to 325F and place the pan with the vegetables on the grill as well as the sausage. I continued to watch the smoked sausage until it was done and the casings were breaking... At this point I placed all of the smoked brats into the foil pan along with the beer, vegetables, and seasonings and turned the smoker down to 250F. From here I let the dish simmer for 2.5 hours. My goal was to get the onions soft and transparent.
Take this smoked beer brat and place it in your bun of choice, top it with some peppers and onions, then with some Joey Chestnut spicy brown mustard! Just like that you've got yourself a darn good smoked beer brat sandwich!

Was planning on making brats tonight for a family get together ... watched this and I am sold (going to make them this way on my Camp Chef). One question ... any ballpark idea of how long it took to get the brats where you wanted them at 325 F. before putting them in with the onions / peppers / beer?

The smoke from these smelled so good! Probably one of my favorites. I actually have the pit boss charcoal pellets, and I’ve give some of the Cherry Charwood from Camp Chef coming tomorrow

When I got the charcoal pellets, I also got 2 bags of the classic blend. I only knew about them from ur videos. Going to smoke ribs with the classic blend soon. I can’t make the air here in California any worse with my smoker!

Great video man! I’m going to try this recipe tomorrow for a March Madness party. I love my new Camp Chef and have only smoked a few things on it so far. Would you recommend an apple, hickory or a smokehouse blend pellet for these brats? Still learning which pellets to pair for certain recipes.
Fruit woods pair well with pork and chicken. I also enjoy hickory with chicken. The brats are an awesome game day meal ( I filmed these for the Cleveland Browns game)
Thanks for the response Anderson. I used a hickory and apple pellet blend. Added three tbsp of brown sugar as you said. Best brats I think I’ve ever made.

@@AndersonsSmokeShow Thanks for the quick response, I'm actually making them right now. My wife, daughter and son in law all have Celiac so I used gluten free beer and I tried the 1/4 cup of brown sugar. I'll let you know how it goes.

Surprised to see you smoke them first. I've always boiled brats in beer for 10-20 minutes, then let it simmer for a while, then sear for color. Makes them super juicy.

Sip for myself....thats why i bought a 12 pk when 4 beers needed too cook. Roughly. I went with a local blood orange ale in Massachusetts. Im not a yuppie hipster its good local made shit like my sausage. Hot sweet and braut. 3 seperate tin containers. Peppers onion and salt pepper. Also on a pecan wood kick after doing pork with it. Massachusetts inherented englands lack of spice. Any seafood i like with salt pepper mayo tarter cocktail horseraddish hotsauce period. Meat is the same. Does guiness go with sausage? I post my method because i like yall bitching and your constructive criticism. This vid did help me and thanks
