      If you need to ask that, you're not ready to cater anything. You absolutely have to have the experience in catering to be half decent at this

    Is the an easy way the carry the chafing dish to and event? For the ones that do not collapse? Especially when you need a lot of them. Any advise

    What kind of napkins did you use for the chaffing dishes so they wouldn't catch fire during service?

      Just regular cloth dinner napkins. There is plenty of space between the flame and napkin. No problems in 10 years.

    I have a wedding to do a drop off service for. 160 people. I’m not “catering” because I will also be in attendance. The venue has a kitchen. How soon would you start cooking and prepping? Menu is Herbed Salmon, Chicken Marsala, mashed potatoes, baked Mac, green beans, tossed salad… Cocktail hour is meatballs, charcuterie board and tea sandwiches. Any advice con keeping things warm for the servers would help

      I’d start prepping the day prior. Especially the potatoes and Mac and GB’s and salad. Do the chicken morning of. Bring sides to temp day of.

    how many wedding guests can I cater with a Keurig single cup coffee maker and a box of Cheerios?

      @@KostasLazanas I like the information type of videos. Maybe go into some detail about how you judge how much food you require for how many people or if these gigs are more profitable then running a restaurant etc.

    What is the easiest way to serve guest?? seated or buffet. Want it to be elegant but not pulling my hair out. Have done less formal event and buffet was easy...but that was for BBQs and church picnics not a formal wedding. Any advice???

      Buffet 100%. If you are going to serve you are going to need a ton of man power. You need 7 servers and 3 people to prepare plates per 100 people you serve.

    Do you warm up everything beforehand and then bring it in those green boxes? How long will that stay warm and to what temp do you heat it? Thanks!

      Yes. Do a temp check to at least 165 and drop them in the cambro holders.

      I don’t. there is enough space. It has never been an issue for me.

      It was a small 50 person wedding super laid back. I’ve had as many as 15 on when it’s a full service catering.

    Can you like, actually show the process of cooking your batches and what you're going for and how you make sure you have enough food for the guests. i'd say this is a 101 and NOT a MasterClass tbh
