This is one of my favorite playthroughs of all time. I has inspired me to play Minecolonies, with Better Minecraft, and recently, rewatching the entire playthrough has gotten me through a very sad time. Thank you Sjin.
I've said it before, but if I recall, the level 4 blacksmith makes plate armor out of iron ingots that has a higher defense rating than diamond armor. Might be worth upgrading all your chainmail scrubs using those.

Sjin you should make a "Cooking For Blockheads" kitchen, there is a mod with that name and its for making stuff muuuuch easier in Pam's and Farmer's Delight, you can make stuff like a fridge, freezer, cupboards, oven, oven hood, sink (which gives you free salt) and cow in a jar (which gives infinite milk). Oh and there's a dedicated crafting table and black and white tiles which connect your kitchen together if you want stuff like an island or different kitchen sections around the same storage. Oh, and you need a specific machine to make Tofu and silken tofu so your cook cannot make it.
Sjin, I'd say Solomon Cane is the greatest warrior; he is UNSTOPPABLE. a swashbuckling, evil slaying, Puritan fencing master with Faith so unshakable, he will never stay down.
You are getting very far along in Minecolonies and your town is looking fantastic! I think it's about time you did a bit more with the create mod, I know you don't want to do too much, this is a Minecolonies playthrough after all, but at least a few small auto farms or maybe a train. Heck, you can do a whole episode about how the supplies gathered by your colony made a whole railroad. And after your buildings are all level 5, you can start to "upgrade" them with a steampunk theme, add moving bits like elevators and cranes, or even making an actual factory to make the Pam's food instead of the cooks. You have the mod, you should use it more.
i get a sense that this is going to end a small bit like kings landing in game of thrones where a dragon is going to burn the town to the ground when strawfingers inevitably escapes
so much leveling up, looks like a medieval city now, love it so much. also Link, obviously, an icon, and can attack at the speed of sound basically in botw though i do personally think if you just throw the one netherite guard alone it's gonna end up a very cursed position of repeated deaths lol

How do you get the cave buildings you use? I am having a hard time finding them as they don't seem to be in minecolonies as a default. I really like them but can't figure out where they are to use them.
You should totally name the super soldier Eragon, thats the name of a guy in both a movie and a book series- he had a dragon named Saphira and he used both bow and arrows, and a sword that used to belong to the guy who trained him, bow mostly in the beginning of the movie and sword mostly in the end. Not even counting him having magic too lol
this would be a good time to do some create mod to make those condiments. also what kind fake ass cheese(tofu)burger is this lmaoooo. im pouring one out for the colonists.

i know this is gonna sound crazy but instead of hanging a cell in the air make a proper jail cell that your guards go into it can also be underground like a dungeon maybe where the second fort is yo can make that into a dungeon keep
Could you make the soldiers ride on mounts. If so, could you tame a bunch of grizzly bear with honey and raw salmon and make a Calvary full of soldiers riding bears

Remember when your warehouse is at level 5 you can further upgrade storage space with emerald blocks

You can use resource packs to add recipes to colonist jobs. This includes fresh water, salt and ketchup.

If you upgrade the barracks towers to max level you'd get four squads of super soldiers.
Use Create mod to automatically make the salt and feed the salt into a stash.
