    I've been making keto ice cream for a few years now in my old fashioned ice cream maker (the old rock salt type). It has always come out like soft serve. I'm going to try your recipe next time.

    Ever since I got rid of ALL sweeteners, I never have any problem with weight. So after 20 years without any sweeteners of ANY kind in my house, I never have to worry about gaining weight. I started the keto diet 25 years ago (before it became popular). The first year I lost a little over 80 pounds. When I started gaining some of it back I cut out ALL sugars and BOOM! I lost all the regain plus more. Then I began getting rid of my health issues too until finally I had no health issues at all, not even a cold or headache. For almost 25 years now, I've not had a single health issue. So now I NEVER use any sweeteners of ANY kind, which is fine with me. I like savory foods and that's what I eat... delicious keto foods that keep me trim and healthy with lots of energy.

      So you don’t eat sweets? You’re not interested in this recipe? I don’t understand why you’re taking the time to make these comments.
      I use stevia drops only. I got IBS problems from some sweeteners. Doing fine with stevia drops.
      But now my sweet tooth is watching my hubby eat ice cream. Got a My Pint” Dash ice cream maker that limits portion size. Trying to figure out how to modify Maya’s recipe for using stevia drops.

      Anything that has a sweet taste will raise your insulin production. It doesn't raise your glucose but insulin is the reason you gain weight.

    Tiny bit of Tara gum _(similar to Xantham but better for smooth deserts)_ helps keep it from crystalizing too much which makes it easier to scoop. (1/4-1/2 teaspoon)

    Thanks for this!! 💕I discovered you googling how to make Keto ice cream! I love Enlightened’s Keto ice cream, but it’s not organic, contains corn fiber, and I wanted a healthier version. Yours sounds amazing!!! 🙌🏻
    I just got the ice cream maker you suggest, your sweetener, and the vanilla you suggested is on the way!
    I think I’ll make the condensed milk ahead of time so it’s ready to go when the vanilla extract arrives (I liked one commenter’s idea also of tripling the condensed recipe and storing the extra in the fridge!).

Yes, you can definitely make the condensed milk ahead, just let it get runny again on the counter (or heat a little) because it will turn hard in the fridge.     This absolutely IS the best version of low-carb ice cream I've personally ever made. It is well worth the time & effort to make the sweetened condensed milk, which I usually double or triple & keep the extra in a sealed jar in the fridge. That way, I have two more batches of ice cream base all ready to go, or use it for caramel &/or a variety of other recipes calling for swtnd. cond. milk. I've found that increasing the quantity only adds about 15 more minutes to the cooking time~ based on using a very large, deep skillet. I use my square, electric skillet & it's great because I can easily adjust the temperature.
    *Maya~ I have the same ice cream maker, & have been thinking about how I can minimize the harder ice cream build-up around the edge & bottom of the drum. I'm going to try lightly coating the drum w/avocado or coconut oil, to see if that might help. I love the machine, yet that last bit of "icier" cream tends to be a bit of a pain for me~ especially if I'm mixing it in with the softer amount for further freezing. I'll report back w/results. =) Samantha in AZ

    I can’t do Allulose AT ALL but really want to make ice cream. Do you have any suggestions? Liquid monk fruit (not erythritol) or stevia blend ideas?

      You could try pure (not blended with something else) monk fruit or stevia. I don't recommend other blends because they pretty much all have erythritol. Allulose in particular makes the ice cream more soft/scoopable, erythritol would have the opposite effect, and using neither would be somewhere in the middle so you'd need to let it sit out a bit to soften. What is the reason you can't use allulose?

    At the end of the vid, you asked if there's a method to ge the perfect scoop of ice cream... My trick is to heat the ice cream scoop/spoon in hot water right before I pull it through the ice cream. Never fails 😁👍

    I would love to make it, however I cannot have dairy so the heavy cream is out. What can I do to almond milk to get the consistency of heavy cream?

    Although the flavour was fantastic, i was left with an oil slick on the roof of my mouth. Was so looking forward to this after churning & freezing for a few hours. The flavour was fantastic but why the greasy mouthfeel after a spoonful? I use organic heavy cream, grass-fed butter and pure almond milk (2 ingredients - just almonds + water) in the suggested ratios. Any suggestions on what I can do to correct this in the next batch?

      I think that results from churning for 2 long. It gives it a bitter like texture . I experienced this when making ice cream in a jar

      Hi Nikki, Sorry, a hand mixer won't work (at least not as an ice cream maker replacement), as the frozen ice cream maker bowl is a big component in how it works.     So if I don't want any almond milk at all, I guess it would be 4 cups of heavy cream, correct? (instead of the 3 cups heavy cream).

      I wouldn’t recommend just heavy cream as it becomes close to butter in texture. If you can’t have almond milk, you can try unsweetened coconut milk beverage instead.

    I am not seeing the recipe for sugar free chocolate syrup? I am cutting out sugar just to be more healthy, and the main thing I am going to miss are mocha shakes. I make my own with ice cream, choc syrup, ice and of course espresso. I need to replace the ice cream and choc syrup. The ice cream technically does not need to be frozen, so could I just keep this in the fridge in a container until I need it? The Big Foot Java stands in my area use a liquid ice cream mix that I am unable to buy anywhere, (it's not sugar free of course) and really don't like paying $7.40 for a 20oz shake when I can make them at home for a couple bucks Can't wait to try your Besti.       Hi Chris, The chocolate syrup recipe is here: www.wholesomeyum.com/sugar-free-chocolate-syrup/ I'm not familiar with the shakes you make but don't really understand how/why the ice cream would not need to be frozen? Typically in shakes that have ice cream, it's added from frozen. But yes, I suppose you could just use a liquid form stored in the fridge if that doesn't matter.

      @@WholesomeYum I am copying a Blended Frappuccino sold by Bigfoot Java. they put some chocolate syrup in the bottom of the blender, add a few shots of Espresso, then about 1/3 cup of liquid ice cream mix (comes in a gallon jug, I believe it's the same stuff you pour into a soft ice cream machine) and then ice and blend. I am unable to get the ice cream mix, so just use store-bought ice cream. The ice makes the whole thing a shake per se. I have stopped eating sugar, and have not had one since the 1st of the year, and would like to make them using your sugar-free ice cream and Choc syrup. :) Thanks so much!

    I usually add gelatine before I put the condensed milk in the fridge overnight, holds the ingredients together. And I use vodka to reduce the iciness when placed in the freezer.

      Thanks for sharing, Tule! I haven't tried gelatin before. Vodka does help reduce iciness in ice cream, but using Besti it's not usually necessary as it already doesn't come out icy. :)

    Almond milk is just not good for ice cream because it has too much water content. Whenever you try to substitute almond milk for milk or add almond milk it's almost as if you're adding straight up water.

      This recipe does not "substitute almond milk for milk", it's a completely separate recipe that was developed for almond milk, and the heavy cream counteracts the fact that almond milk is more watery.

      @@WholesomeYum Skip the almond milk. Like I said in my previous comment you don't want to add almond water (the process of making almond milk is straining water through almonds) to ice cream. It messes up the experience of ice cream. If anything doing a gelato with mostly milk and some cream makes more sense.

    I found that the cream leaves that horrible film of fat in your mouth like you just drank a bottle of cream not pleasant at all so I’m going to try the almond milk too

      I experienced that too when I used to make this recipe with heavy cream only. When I do a combination of cream and almond milk, I don't find this is the case.

      The butter helps form the sugar-free condensed milk, it's not the main part of the recipe.

    This is not true ,it is not fully set, any ice cream can be scooped at four or so hours is half set. Real set is over night

      There is no erythritol in this recipe. You can substitute the almond milk with another keto milk of your choice, such as coconut milk beverage, but either way you can't really taste it.
