      The cookie bars are my go to dessert now, but I use butterscotch & heath bits since I can't eat chocolate. They are so good & so hard to eat only 1. 😆

      I add the picante and taco spices BEFORE I cook the chicken in a crockpot. A mixer does shred better than a fork!👍
      Great added on top of rice-with sour cream and cheese!💕🌮

    “Variety is the spice of life.” NOPE! I think in these busy days what we all really crave is consistency. Making entertaining & hospitality overly complicated & expensive just adds stress to what should be an enjoyable time. If someone is kind enough to ask me over for a meal, I don’t really care what’s on the table. It’s what’s in our hearts that’s important. Thanks as always, ladies!

      You can enjoy variety better from a solid base that doesn't stress you out, like the tacos in Dawn's group lunch. I agree, you don't have to re-invent the wheel every single time.

    As a mom of an adult prodical this was so encouraging. I sent this to the group of moms we have that are all praying for our prodigals. The good news is, at the end of that parable, the prodigal came home to the Father. We hold on to that in faith believing in the things not yet seen. God is good.

    I shred a rotisserie chicken for recipes that call for shredded chicken. Easy, affordable, and saves time in having to cook chicken. I keep them on hand -- shred into a freezer bag after buying them, then there is always a bag of shredded chicken ready to go when I need it.

    Diana, you look great and exude confidence regarding working out. Nice how you took charge of that workout thing. You could have just let it slide since life intervened. I just loved seeing the two of you together encouraging us through the little struggles and joys in life.     Years ago I made an easy chocolate cake when we had a guest visit. She fawned over it. The next time she visited my daughter changed it to a lemon cake and that went down well too. I set myself a challenge to play with the recipe every time we got together. It was amazing how much fun we had just simply switching a couple of ingredients.

    It is so interesting what you said at the beginning of the video about how the families you are getting together with have seemingly nothing in common with you (on paper), yet you have continued to enjoy getting together. I am a 60 year old Jewish Buddhist with grown children, living in Vermont. I love your channel. It’s not just the minimalist content, but how you have so much integrity. You don’t take yourself too seriously and you are so non-judgmental. “You do you”. I love watching you alone and you with your family, including Diana. You are real and so refreshing.     The recipe is something I will be trying. The lesson on simplifying and not feeling the pressure to find and bring a new recipe is very freeing in an age when we feel pressured to keep up with the Joneses and show off our impressive skills! But today the devotional on persistence particularly in prayer was right on target for my heart! Thank you both for striving to be who God wants you to be!

    Simplify even more! Throw raw chicken, taco seasoning and salsa in crockpot for 4 hours. Use hand mixer to shred. Done!!

      Yes! I’ve done this for years. Sprinkle frozen chicken with cumin powder and garlic salt if you don’t have s packet mix. Dump salsa over it. Very easy.

    I make a similar chicken taco dish but skip the oven and throw my frozen chicken straight into the crockpot add the salsa, seasoning and some chicken stock. Cook the chicken in the crockpot then shred and eat :)

    Love it! I wish more people would get on board with having the same meal! As you say; it's versatile for different allergies AND it's also more Autism-friendly as someone who LOVES my routines and same foods etc. 💗 The amount of mental energy saved by being able to auto-pilot makes a huge difference too!

    I love the one meal idea. I need to do this for a meal to bring over if a family needs it. I always stress either when I make one or I just don't make it and feel guilty. I've been meaning to have a go to recipe and I love this chicken one! Thanks Dawn. You go Diana! Enjoy your time getting fit for you and your family. Do it now because it gets harder to fit in later. I'm in,late 50's and I'm consistently exercising to stay healthy.

      Same for my larger family gatherings. I like knowing what I will bring (my easy dish) and then if I have extra energy\time , I can make something new, to bring along as well. Definitely relieves the stress.

    I’m glad you found a group to spend time with. I also love to simplify everything as well. You can save more steps by throwing the raw chicken in the crockpot with your seasoning and salsa to cover. It will easily fall apart when done so no mixer needed.

    This is how potlucks at church always worked. Everyone had their potluck recipe that they make every time. Potlucks were exciting, not stressful because you know what you’re making- it’ll be great and people will like it… and no duplicates to worry about!

    When you were talking about sitting back and then pushing through it made me think of that scripture in James 1:2-4 about considering it pure joy to face trails because you know that the testing of your faith produces perseverance. Perseverance MUST finish its work so that you may be mature and complete not lacking anything.

    This is the problem with people trying to “cook” today. Many are signing up for those meal prep subscriptions because they think there are “secrets” to cooking real food. Your explanation is fantastic. So many people are looking for “recipes” and are frozen like deer in headlights without one. If you have a good range of herbs and seasonings in your kitchen (salt, pepper, paprika, cumin, oregano, cayenne, marjoram, thyme, cinnamon) you can make almost anything. You don’t need the packets even although it’s easy for an occasional quick meal. Then have canned tomatoes, salsa, mustard, oil and vinegar, and you can do so many things. You can use dairy or non dairy ingredients to make “creamy” style meals. Good quality canned broth will make soups out of the same ingredients. Crockpot or instant pot is your friend. Seasoning is the “spice of life”. Marinate your meats ahead and they add so much flavor. Ground beef, chicken or turkey are super easy. Add a veggie and rice and you have almost an instant meal. Doesn’t take a lot of equipment, tools, or technical skills. You can make a skillet meal the same way, add some simple veggies for added flavor and bulk.

    Thanks for the recipes! I stopped watching the news over a year ago. I look at headlines to keep abreast of what it going on. Found myself talking to the TV and my husband made the point "you know they can't hear you, right?" ! It seems the world has become so hateful.     I needed this video today, thank you. It was my son's birthday celebration with my in laws and nothing is quite enough for them. My husband and I are simple people, we live a simplified life and my son is HAPPY. I didn't have balloons, or a fancy cake, or an extravagant dinner, or some big to do. Apparently that was disappointing to some... and that put me in tears. Maybe they will learn to appreciate it one day, maybe not. But I can't change who we are just to please them, and when I have tried it still doesn't work. So next time, maybe we just do tacos.

    Even easier just throw frozen chicken breasts, salsa and taco seasoning into the crock pot and cook it there. No need to dirty the extra dishes! We also do pulled beef this way for French dip sandwiches or beef bbq or tacos! Just toss a frozen roast in the crock pot with boullion cubes and dried onion (cheaper than an onion soup packet but you can use that too)

      Be sure to always thaw the chicken before putting it into a crock pot. It *is* safe to put frozen meat directly into an oven or skillet, but crock pots heat so slowly, the meat remains in the bacteria danger zone for too long. So if using a slow cooker, make sure the meat is thawed first to avoid food poisoning. ♡

    I totally get why you do this. However...some of us are minimalist who love to cook. My partner and I spend hours figuring out complex meals to serve our family and pals. Especially now when restaurants are mostly out of the question we want to raise the bar. We do take requests from our pals for things they've had before but we like to lift it up - challenge ourselves.Love you guys and vive le difference!

    There is a man at my church in his 70s. He always bring Greek potato salad that I love. I told him so and told to please keep bringing it at every gathering. It’s definitely a simple recipe but I look forward to it at every potluck.

    Just wanted to say THANK YOU for your content! Ive had chronic pain that has been getting worse for the last year and between the never ending appointments to try to figure things out and a house completely filled to the gills with crap I felt like I was drowning, in life and in the stuff. With two young kids that I felt I was failing as I never had time and energy for them after trying to keep up the house, I needed to do something. The last two months that the EFMN truck has come we have put out massive loads of donations and my husband is completely on board. I’m finally seeing a light at the end of the tunnel and I’m so grateful for you!

    Oh my gosh, the reason I have stopped making a lot of my chicken dishes in because I hate hand shredding the chicken! Thank so much for the tip with the mixer. I think my hubby will be happy to eat my sour cream chicken enchiladas and my chicken and dumplings again! ❤️

      Target has some amazing precooked and shredded frozen chicken. I’ve cooked it in a skillet and also in the crockpot. It tastes like I cooked it from scratch!

    In my old church we had potluck every sunday after church and I always brought the same thing and it became one of our church peoples favorite things and they expected it. It was nice to not have to think about it. I love having a simplified menu.

    I'm trying to figure out why you're doing the oven step. Throw the chicken in the crock pot, pour the salsa over it, and set it on low if you have the time, high if not, until done. You can use a hand mixer with the crock pot if you have one. I'm all about one pot cooking 😂

      I believe that cooking the chicken before cooking in the crock pot cuts down on the amount of grease in the dish.

    Honestly this is a life hack worth trying. We love having friends over for dinner, but don’t have the energy to make a big fuss every time. We’ll serve really good yet simple (and often budget friendly) food, light a few candles and maybe open a bottle of wine if it’s weekend. Put on some nice music and let the guests come early to help chop the salad while we casually finish the cooking. Putting our guests to work always makes the mood relaxed and gets the conversations going, and serving delicious but simple food makes them comfortable. I want them to feel like they’re part of the family, like they can be themselves and just enjoy a good time together with us.

    Simplifying is such a blessing! And not feeling need to always be new/different unless that feels good/easy/fun is huge. I love simplifying my life more and more bc everything important becomes clearer and clearer☀️ When maintain a busy and over complicated life it’s too easy for me to avoid what might be hard to address in my life. Simplicity allows me to see all aspects of my life - no clutter and busy schedules to distract me from seeing me🙃

It is not so much about us being able to give our laundry list of wants and needs to our Creator as it is about keeping us in the proper relationship with our Creator.     I make my chicken and pork in the instant pot and just put the salsa as the liquid. From frozen it takes less than 20 minutes. I use green salsa sometimes...yum! I will use my hand mixer in the pot so I don't dirty any more dishes.

It brings me back to warm memories of big get togethers with family and friends with favorite dishes brought time and again to the potluck which themselves were a central part of the festivities.
