Technically Adobo means marinade. I don't marinade mine. I boil instead. I used Dark meat specially drumsticks. Boil the chicken in 1/2 C Vinegar uncovered for about 5 min for vinegar to evaporate. Then 1 C soy sauce. I don't like 1=1, Vinegar tends to be too strong. Once it's soft, I remove everything. I use a S-ton of garlic. I don't use onions. About 1 to 2 whole garlic, minced. sauté it and once they are about to turn brown, I toss the chicken in, constantly stirring to coat the chicken with the garlic oil. Once it nice and slightly brown, I add back the sauce and reduce. On my video, I did remove the chicken while trying to reduce, because it will start to fall apart. Cooking is an art, I never follow recipes. I always tweak it to my liking. Cooking is my passion, and I explore other ways.

Actually, you can use any type of vinegar if you can't find rice vinegar. But normally here in the Philippines, we use cane or coconut vinegar because those are what you commonly find in our local groceries. Also, you can use ground pepper if you don't like the whole pepper

Yes when i cook chicken adobo or pork belly adobo…I simmer them with soy sauce, vinegar, bay leaves, onions, pepper corn, garlic, garlic powder….then i put the chicken or pork belly in air fryer then put it back in sauce!! Do this and your adobo will be delish!

Until, I got to San Fernando and ate in places like Den Lim's kitchen.

Entertaining video! Your Adobo recipe will get better as you continue to cook the dish. May I advise to cook it using Filipino Soy Sauce and Filipino Vinegar. It really makes a difference!
Kurt, to achieve a more flavorful adobo, marinate all the ingredients an hour of so (the longer it is soak in the juice the better before cooking the except the brown sugar. Add it later (halfway done). Also, adding more pressed garlic and ground black pepper will do the trick to achieve a flavorful adobo. Haluin mo rin once in a while, it won't hurt. FYI, you can mix pork and chicken together if you like or pork or chicken by itself... your choice. 😊 Enjoy. I'm just happy to help!
For much tastier sauce,marinade the meat first for about 30minutes to one hour to the engridients,soy sauce,vinegar,a little amount of amount of salt,depends on the size of meat to be cooked,add minced garlic to the mixture n set aside. Boil the mixture n meat add a little amount of water to boil. Let it boiled for about 15 to 20 minutes,turn off the fire and remove the sauce from the fan n let the meat fry until golden brown then add the remaining sauce,season to taste,you may add brown sugar if you want a sweeter sauce. That's my adobo version.
to make it easier for you, just put everything in a pan or pot (add a small amount of water) bring to boil and let it simmer for 25-30minutes until you get the right sauce consistency. and you're done! the original adobo doesn't have onions, use a lot of garlic instead. the most common vinegar we use are palm vinegar, coconut vinegar and cane vinegar.

The kind of meat you are using is marinated in ground pepper, salt & msg primarily before adding it to the sautee. Cooking time depends on the kind of meat.We add bay leaves to impart flavor & aroma! Fives minutes before turning off the heat add vinegar, according to your taste.This allows you to 'cook' the vinegar. Heinz cider vinegar here in the states imparts a very good flavor. Ay Kuya Kurt, you don't have to follow the recipe to the letter...... Here's where you run into the concept of "Tancha-tancha lang" .... which means, to just guestimate or to play by ear.. sometimes when you ask a Filipino how they made a certain dish, let say Adobo... they'll rhyme off the same basic ingredients for that dish... but when you ask for the precise measurements... they'll just say to you, " Tinancha ko na lang " or " Tancha-tancha lang" ...meaning they put a little bit of this , they put little bit of that... they just improvised and adjusted the amount of ingredients until they get the desired taste....The recipe is useful for knowing what you need to buy, but it really is to your taste..... when you say , what is your secret 'sangkap' for an ulam ... that is what you mean when the answer is "love" or "lab" .... lol... It means you stood at the stove and put your heart into making the dish... adjusting the ingredients until it tastes good .
Don’t take out the peppercorns! They give a distinct flavor to the dish. Maybe you can put them in a cheesecloth while cooking so you can fish it all out afterwards easy peasy! Btw, heard that the 2034 Olympics will be in Salt Lake City. 😅😊
You can just dump all the ingredients together. Simmer it for hours so it’s falling off the bone. more sauce- 1 cup of soy sauce, 1 cup water, 1 cup vinegar. Leftover sauce- sprinkle it in mayo. Adobo sauce for sandwiches. You can also deep fry shredded adobo leftovers.

You use sandok to scoop rice from the cooker. I'm not so sure about the Tagalog translation of fluffy but I think it must be malata. Oil is mantika and another term for tangy is citrusy so it must be maasim in Tagalog.

Don’t take out the peppercorns! They give a distinct flavor to the dish. Maybe you can put them in a cheesecloth while cooking so you can fish it all out afterwards easy peasy!

Kuya Kurt- The original adobo doesn’t have onion. Ingredients- Garlic, Ginger, Black pepper, Vinegar and sotysauce. Simple 😊

You can just dump all the ingredients together. Simmer it for hours so it’s falling off the bone. more sauce- 1 cup of soy sauce, 1 cup water, 1 cup vinegar. Leftover sauce- sprinkle it in mayo. Adobo sauce for sandwiches. You can also deep fry shredded adobo leftovers.

You use sandok to scoop rice from the cooker. I'm not so sure about the Tagalog translation of fluffy but I think it must be malata. Oil is mantika and another term for tangy is citrusy so it must be maasim in Tagalog.
