i cooked this without adding vegetables and without the lemon grass. it's so delicious! the aroma is permeating the kitchen and smells so good! I will make this for a potluck. the best curry I ever made:) Easy and simple and very few ingredients. Thank you.
On my part, I'd put salt only after the meat is tender or almost. This way meat gets to tenderize quicker. The dish anyway looks yummy. Thanks for sharing.

To speed up the cooking process, I would pressure cook the beef first then transfer and simmer in a separate pot with its seasonings and additional beef stock.
Pressure cooked meat, though tender, tastes very different than normal 1.5 hrs cooking. I know it saves time and energy using pc but the flavor definitely is lacking.
For those who don't know that.. this is a Pakistani curry called aloo gosht usually people have it with flat bread(roti) or with boiled rice it's tastes amazing...thanks🤭
I am pretty sure you are the one who does not know. Pakistani traditionally do not use coconut milk, creams, lemon grass, Anis and usually do not use the curry powder to create curries. Aloo gosht in Pakistan uses Tumeric, Jeera, Garam masala, corriander powder, pepper corns, cinnamon sticks, cloves, etc etc .
