I grew up eating Spinach & Potatoes, and at 70 I still make it. Canned spinach (undrained) mixed with lumpy mashed potatoes, butter, and salt. I have lots of feta, potatoes, and mint but no fresh spinach. So I’ll try it using my old standby, canned spinach. I’m sure it’ll be delicious. 😊
The printed recipe calls for turning the wilting spinach with tongues. This proved nearly impossible for both me and my wife (who singed her hair in the attempt). If you insist on trying anyway, select a very wide pan and induction cooktop for the job. The taste of the finished dish did make up for the burns though, so next time we'll try turning the spinach with tongs.
Thank you for teaching me how to cook. Every weekend I travel to my parents home and cook one of your recipes. The corned beef was awesome. I was going to make your moms potato au gratin to go with our Easter ham, but I have to try this instead??¿?

It always makes me happy when you include vegetarian-friendly recipes, thank you! I didn't have mint, but used dill and parsley instead, and used some lemon-infused feta since I didn't have lemon. I actually had dried potatoes (from a scalloped potato box) that I re-hydrated by covering with boiling water for 15 minutes. It was really tasty, so much better than the powdered cheese mixture that came in the box!
Awesome side for the ham dinner I'm planning. Minus the egg (allergies). I understand the inclusion of egg is a binding agent. But really and truly, my experience, more times than not, it doesn't make a difference. Thank you, Chef John!
Made this dish for Easter brunch and it was a major hit. The subtle taste of mint made a potato dish refreshing! Who would’ve ever thought! This recipe is a keeper.
Made this with a few variations. Used frozen spinach rather fresh, left the water out. Did the potatoes in the microwave. Went to the supermarket to get feta, came home with a seniors moment, forgot the Feta. Used a combination of grated Parmesan and Havarti. Turned out great.
Greetings from Greece! While this is not originally Greek AFAICT (Cretan origins, born and raised in Athens, living in the Dodecanese), it is very much par for the course with our preferences; good job, and it looks really good!
FYI Although my grandma used phyllo dough and I do prefer it, spanakopita can be made with other types of dough. So, experiment with something easier to work with and enjoy. If the filling's good, you'll love it anyway!

hey chef! I'm a big fan and was wandering if you ever tasted the Jewish food "matzah", a food that is traditional for the Passover holiday, there are many dishes using matzas and I would absolutely love seeing your take on some of them.
Delicious! I went with Thai basil instead of mint because that's what I had and it came out really tasty. I get plain, boiled potatoes from my Polish mother in law all the time, and now I've got something else to do with them. Thanks chef!

I've got an idea for you if you haven't already done it: Mushroom and Swiss burger. Here in the Midwest, Culver's makes these and so do several other chains... I'm not a fan of the texture of mushrooms, but these burgers I'll eat the hell out of. Hardee's/Carl's Jr. do a similar burger. I'm sure you or Joshua Wiesman could easily beat the fast food versions.
Well I see my favourite potato fiend has had spanakorizo on his mind again ;p Since you posted that recipe, spanakorizo has become a mainstay in my cooking. So great and easy. I top it with a fried egg usually :) Might have to give this a try as well.
Wish I still saw you in the algorithm. Turn up the dB a little. I have to turn up my volume by 25% to hear you. It might have an effect on getting picked up more these days as everyone is louder.
Orange glazed carrots with dill and blanched asparagus salad with red onion in a red wine vinaigrette. And of course pickled beets-keeps everyone on their toes trying to eat while wearing their new Easter outfits.
Beets go really well with feta too. I allways make a beet carpaccio. Cook beets sliced very thin and layed out on a plater. A cesty lemony olive oilve vinegrete over its and feta crumbeld on top. I save so Dressing to drizzle it wright before eating
I like your recipes. I really, really like your recipes. But what I don't like is how they get printed out when I go to Allrecipes. Granted, some recipes are more complex than others, but for the more straightforward ones, is there any way possible for you to tell Allrecipes that those do NOT need to go on for more than one (1) page? This one is a case in point. Please? Either that or publish your own cookbook. For sure, I would buy a Chef John cookbook!

You don't have to use tongs he just does use whatever you would normally use The point is not to overcook them.

Since you have spinach and cheese in this recipe, wouldn’t you want a little bit of grated nutmeg in the mixture, too? I know that’s what I’d add.

I think the more surface area exposed to the water, the more they absorb and get soggy. I'll probably steam mine whole.

Please discuss Tagine cooking. It’s low & slow cooking great for all involved. Allows the vegetables and meat to cook in its own juice. Healthier!
