Steve Selin was a musician when he met the late, inimitable Peter Hoover, who was a lifelong ardent string band music player and ethnomusicologist. Peter also was a cider maker, which rubbed off on Steve, who later founded South Hill Cider in Ithaca, NY, which sits between two state parks and opens up to one of the public trails of the Finger Lakes Land Trust. We met up with Steve and his friend Melody back in August to scope out some apples for cider making to learn about what makes a good cider apple versus a good eating apple.

I love watching Summer's channel. It is like going home for me. I am 1.5 yr shy of 80. I live in Texas but grew up just south of Binghamton in Great Bend, PA. Enjoyed watching Steve's intro on making cider. My late husband grew up there on the Susquehanna River. His parents owned an old farm that his great grandfather built. They had an apple orchard, with various old trees. Every year they gathered up the fallen apples and made cider. There was no science on their part. They stored it in the cellar and at some point his Mom put some kind of yeast in it to let it ferment into vinegar. My Mom had a Northern Spy in our front yard--so sour! However, our neighbor had a different variety of apple and I always had to help Mom peel and cut them to make applesauce. I hated doing it, but she assured me that it would be great eating in winter. She was right!
Summer is the perfect person for a chicken series. She just vibes with them so well, and you can feel the love through the screen as you watch ❤ also, gorgeous property! Like a piece of freedom

Loved this episode, what a wonderful property! Something as seemingly mundane as an apple is in fact so intricate and filled with such a rich history. The beauty of the natural world combining with human interaction is so incredible, sometimes devastating, but more often than not; simply beautiful.
It was such a lovely walk through a gorgeous landscape on an equally gorgeous afternoon in autumn with some lovely folks. Here's to more of that.
Summer, the chicken whisperer. Love it. Very interesting video, As kids we used to steal crab apples from the neighbour's tree and the neighbour would get upset and come out and chase us with a broom. We'd dip them in sugar and eat them.
Our family would pick many bushel baskets of apples from the farm orchard and then rent an apple cider press at a local apple farm and we'd make our own cider. We didn't do hard cider so my Mom would bag the juice and freeze it to prevent it from turning into vinegar.
This video brought back all these memories. LOL.
So much good information here. Writing on apples with Sharpie -- brilliant! I need to steal that idea for all the crazy trees I've been foraging this year. Once again, FFL drops a super relevant episode for me!

@9:57 Summer, you were right. I was thinking the same...how come cripsy-ness, not sponge, turns into mush.
That was a wonderful virtual experience, & quite educational. If you have a tree with egg casings, try to spray the egg sacks with some Horticultural vinegar using a spray canister with a long handled wand. Cut with maybe 1/3 water for the acidity level of 30%. It's so acidic it burns plant tissue to a crisp so also burns human skin & must be used with protection of the eyes too, & with great care to prevent serious skin burns.
So it should kill the egg sacks if it can penetrate the outer material. I've never seen one in person, so no idea if they're built with many layers to repel water & slow predation. Are those egg sacks you were / she was crushing of the Asian Longhorn Beetle or the more recent invader - the white winged with a big spot moth, or something else?
So - just my 2 cents, but - I was noticing how graceful & sweeping the antique apple tree near the house is. It was shown as the video neared the end. I was gasping at how glorious its shape is - thanks to the great camera work, BTW, just as the resident said that they plan on cutting that tree down because as an apple - it has no culinary value.
It struck me as so sad that because its apples aren't as good as others, it was expendable, like a weed, & then I heard the guy who makes cider say that it actually adds a subtle pleasant finish when mixed with the other apples. It's like the way I like my soups, stews & sauces better with Bay leaf, yet can't define its flavor. I just notice something is missing when I'd forgotten it.
Maybe it's use in ciders needs to be explored before cutting it down.There may be few other trees of its kind left, it's likely a regional native, & few would be of that age perhaps. Also, there may well be a spectacular view to be had by removing that stunning tree, so ...But it is so special & it could be it's been through 80, or 100 yrs old - or older & it's in abundant health - covered with apples, which are a light color & make a very pretty fruit tree. Old apple trees that I've seen don't usually take that shape. It might be one of its native characteristics along with surviving decades of lightning, high winds, & ice storms & insects. There might be good reason to cross pollinate it with other types of apple.
Also, I loved seeing the Viburnum with the blue berries "in person"! I've always wanted to plant at least one. Now I want a few. Another great episode you guys & the camera work is so well done.

Put salt on sliced apples to keep them from browning > not a lot needed you can stir it in or rub the slices with your hand with the salt

Are they also bee keepers or is there a bee keeper within flying distance? Looks like Sander used a green filter for the grass. Those trees are mighty. Interesting that they are scattered on purpose, I suppose.
Not sure about bee keepers in that area. They are fairly remote. Only one other neighbor nearby. And it is UNBELIEVABLY green this year. Like, it doesn't look real. But it's been so LUSH, SO RAINY (flash flood warnings actually right now), that the vegetation has no choice but to be opulently green.
Pears need to be picked before there ripe.

Should of started this in August. not when the season is over and the best apples have been picked over by every wild thing. You are silly.
Hi Mia, this was a walk earlier in the season, prospecting for apples. With these long-form videos, they are, as you can imagine, not shot / edited live, and it oftentimes takes us a long time to get to editing them. So if you see some videos come out that look as if it was shot in summer/fall -but they come out in winter, you'll understand why. Sometimes stories take time to tell and share. Summer can have a silly playful side but in regards to this video with these folks they certainly know when to pick etc. There is such an abundance, if some get taken by critters it’s all good . It’s also hard to release videos the day after they’re filmed. I personally don’t care about the timing of a videos release, I like to watch them anytime!
