Finally a product I can really see the point to buying. I feel like it will give me a real edge in the kitchen. Haven't felt this compelled to cut into my savings since the slap chop.

You still want to oil the blade and keep it clean. Stainless steel can still corrode, especially in the presence of acid. And you don't want to use a thin blade on anything hard. Even fruit. Very high hardness stainless will snap like a twig if you twist or scoop at all while cutting into something like a thick skinned squash or pumpkin. That's why a lot of chefs knives have a thick spine, and are made of a more ductile steel. It's less about sharpness and more about toughness. Which is why a good chefs knife will last generations if it's taken care of.

K-tip gyuto are some of my favorite knives.
As a knife enthusiast, I really appreciate the craftsmanship of the knife AND your explanations! Easy to understand and follow! How many layers and folds did it take to get that Damascus style? And a personal thing that I like is hollow ground knives. If Zen's style knife wasn't so thin, I would love to see it hollow ground!

The knife looks AMAZING! Also, I loved the presentation here. All the information was realistic, upfront, and technically driven. As soon as I had a question like what the knife might not be suited for and how to use it properly, the answers were almost immediately given. It made the whole thing feel a lot more like getting the actual product specs I want instead of a marketing pitch, and I loved that! Well done, Tim and Zen! 👍And 15:27 to 15:45 gave me a nice chuckle

Honestly tho, I never olied up my Kiritsune Aogami #2 since I bought it a year ago.
And I work 10/12h a day with tons of vegetable preps.
Yeah it gets lightly orange when I cut wet or acidic things, but it all gets away with a clean umid towel once spotted.
