    I did a lot of mistakes during preparing the ingredients. This is my second attempt using this recipe. The first one I baked, my family members said its super sweet, so I want to reduce only 10grams of the sugar, but unfortunately I reduce it more than half! I didn't realised I only put 90grams amount of brown sugar! Amazingly the taste turn out just nice and I love it.

      It is not recommended to add granulated sugar to buttercream because the sugar particles are chewed as they are and the texture is not good.
      If you don't have powdered sugar, I recommend another buttercream.
      You can add coffee to the flour buttercream.

      Je n'utilise généralement pas de sirop pour les gâteaux au beurre.

      It is natural for buttercream to harden in the refrigerator.
      Remove from refrigerator 1 to 2 hours before serving and leave at room temperature to soften.

    Do you not add sugar syrup on the cake bases before applying whipping cream?

      In my case, I only apply syrup to sponge cakes like genoise.
      Butter cakes and vegetable oil based cakes are not applicable.
      It doesn't matter if you apply syrup if you want.

    I don't have 3 tins in same size, can i use one to bake three times? Will the batter change in consistency?

      I also had one pan, so I baked it three times. However, cover the remaining batter so that it does not dry out, and mix it lightly before putting it in the pan.

      @@JoonsLittleTable please recheck the icing sugar qty, you've started 3cups so in grams as per your 240, it should be 720gr? My icing is more to a thin consistency OR, butter has to be halved ..

      One cup of 240 ml of icing sugar is about 125 grams. 370g is equivalent to 3 cups.
      But this is American Buttercream, so it's sweet buttercream. The sweetness can be increased or decreased by 10% according to your taste. For the amount of butter, follow the recipe.

      The butter cream used in this cake did not use flour. What is used in the sponge cake is all purpose flour.

    Joon, I notice your cake looks really dense and fudgey, even though your fat/flour ratio is 1:1. What part of your method created that? Was it adding the eggs one at a time with the tbsp of flour mixture and mixing?

      Add 1 egg and 1Tbsp flour mixture to butter and sugar mixture and beat for 1 minute. If you make enough air each time you add an egg, the texture of the cake feels more soft and fudgy.

    I just made the mocha cake and buttercream icing. Family loves the taste of both. I'm novice baker so would have appreciated more details in the recipe or verbal instructions in the video. What did I do wrong? Did not prepare the coffee mixtures ahead of time so they could cool. Did not know that blending by hand, hand mixture and big handsfree mixture might give different consistency to final "mixture". Also if the recipe (text) layout had more details as to what gets mixed first, why you only want to add little dry and wet and mixture before repeating the process. I've now taken your recipe. Replayed your video about 40 times so that the instructions will now result in a better maybe perfect mocha cake with buttercream icing. My Buttercream Icing Is NOT SMOOTH like mayonnaise..it has bubbles in it...

      In the case of buttercream, soften the butter at room temperature like mayonnaise, then add the following ingredients and beat. Beat enough powdered sugar to melt.

      If I have a chance, I'll make a mocha cake without eggs.
      If you want to bake in a single cake pan, I think an 8-inch pan would be nice.
      At 6 inches, cake dough will overflow, and 7 inches will likely not be cooked in the center.
      My answer is not accurate because I didn't test it myself.

      Both buttercream and chocolate drip can be stored in the refrigerator.
      I also freeze the remaining buttercream and reuse it later by putting it at room temperature.
      However, in the case of drip chocolate, I do not recommend it. If it is melted for reuse, it may not become shiny or may be separated.
      I recommend that you make enough and use it immediately.

      You have to beat a lot so that you don't feel the particles of sugar powder.
      In my case, the amount of milk that I add in summer and winter is slightly different.
      On cold days, butter hardens easily, so increase the amount of milk. I recommend reducing the amount of milk on a hot day.
