Almond Crusted Halibut with Lemon Butter Sauce

    Ingredients
    3 - 6 to 7 ounce fillets of halibut or sea bass
    Kosher salt and black pepper for seasoning the fish
    1/4 cup olive oil
    1 tablespoon butter
    Crust for fish:
    1/2 cup sliced almonds - roughly chopped
    1/2 cup sliced almonds - finely chopped
    1/2 cup flour
    1/3 cup flour for dusting fish
    1 egg + 1 tablespoon water for egg wash
    Lemon butter sauce:
    2 tablespoons olive oil
    1 tablespoon shallot - finely chopped
    1 tablespoon garlic - finely chopped
    1/2 cup white wine - Sauvignon Blanc, Pinot Grigio or other dry white wine
    1/4 cup heavy cream
    4 tablespoons lemon juice or the juice of 1 lemon
    4 tablespoons butter
    Zest of 1 lemon for garnish
    Finely chopped parsley for garnish
    Instructions
    1. Season the fish on all sides with kosher salt and black pepper. Mix the roughly and finely chopped almonds with the 1/2 cup of flour in a bowl to make the crust. I used a chef knife for chopping the almonds but pulsing the almonds in a cusinart would work great as well. Put the 1/3 cup plain flour in another bowl. Mix the egg and 1 tablespoon of water in another bowl. Toss the fish in the plain flour bowl coating all sides and shake off the excess. Then dip the fish into the egg wash bowl coating all sides and shake off the excess. Finally toss the fish in the crust bowl pressing the fish into the crust mix to coat all sides evenly. Place the crusted fish on a plate while we work on the sauce.
    2. Start a sauce pan on medium heat and pour in 2 tablespoons olive oil. Add the shallots and garlic and sauté for a minute stirring frequently. Add the white wine and reduce for a few minutes until most of the wine cooks away and it begins to thicken. Add the heavy cream and reduce until it begins to thicken. Turn the heat down to very low and add the butter stirring constantly until fully incorporated. Turn the heat off the sauce while we cook the fish.
    3. Start a sauté or non stick pan on medium high heat. Add the 1/4 cup olive oil and 1 tablespoon of butter. Cook the fish on all sides until the crust is golden brown. Remove to a sheet pan and cook in a 400 degree preheated oven until the internal temperature reaches 140 degrees. Cooking times will vary depending on the thickness of your fillets but it should take approximately 7-10 minutes. If your fillets are thinner the fish may already be done when you remove it from the pan so check the temperature before putting it in the oven.
    4. To serve, turn the heat on the lowest possible setting and stir the lemon butter sauce for a minute to warm it up, "don't overheat or the sauce will break". Top the fish with sauce and garnish with the lemon zest and chopped parsley if desired. Serve with your favorite rice or cauliflower rice like I did and pair with a delicious vegetable. Or this fish could be simply served with a salad for a nice lunch. Enjoy!

    This looks delicious! I may try using almond flour in place of the regular flour, or go halvsies... Haven’t had halibut in quite a while. Thanks for the inspiration!

      Thank you! Gluten-free flour will work great with this recipe. The crushed almond part of the recipe is essentially one step up from almond flour. Let me know how it turns out.
