Making Chicken Fried Rice

Recipe:
2 cups of cooked rice
2 medium chicken breast
1/2 cup frozen mixed vegetables
1 tbsp olive oil
3 strips of cooked bacon
1 egg
1 pat of butter
1/4 cup onion
1 tsp garlic powder
1 tsp ground Ginger
2 tbsp soy sauces
1 tsp salt
1 tsp pepper
Chop the chicken into bite sized pieces. Mix in the salt, pepper, garlic powder and ground ginger and mix well. Set aside. Chop the onion. Add the olive oil into a heating pan at a low heat. Once the olive oil is heated to a medium heat, add the onions and sauté for a minute, then add your chicken. Cook chicken until a crispy brown at a medium heat (approximately 5-7 min) and the onions are carmelized. Take out the chicken and add in chopped bacon pieces and pushed to the side of the pan and scramble the egg in a pat of butter. Once the egg is scrambled and done, add in the cooked rice and chicken and combine well on a low heat. Then mix in the frozen veggies. Pour in the soy sauce (add more or less to your taste). Stir to combine gently. Finally cover for 4-5 minutes in low heat. Turn off heat and enjoy.
Yum! This looks so good. We love to make this and use up all the leftovers. We use it as a main dish as well!
