Ingredients
5 strips uncooked bacon chopped*
1 large yellow onion diced (about 1 cup)
1 red pepper diced
3 cloves garlic minced (about 1 Tablespoon)
1 lb ground beef 455g
1 Tablespoon brown sugar
1 Tablespoon chili powder**
1 Tablespoon ancho chili powder**
1 ½ teaspoons smoked paprika
1 teaspoon cumin
1 teaspoon onion powder
3/4 teaspoons ground black pepper
½ teaspoon salt
1/8 teaspoon cayenne pepper***
1 1/4 cup beef broth 295ml
15 oz dark red kidney beans lightly rinsed and drained (425g)
15 oz black beans lightly rinsed and drained (425)
14.5 oz diced fire roasted tomatoes undrained (411g)
1 7- oz can fire roasted green chilis 198g
1/4 cup tomato paste 66g
1 Tablespoon Worcestershire sauce
Preferred toppings particularly sour cream, shredded cheddar cheese, and corn chips
Instructions
00:00 Introduction
00:29 Place chopped (uncooked) bacon in a large pot or Dutch oven and cook over medium heat until crisp and cooked through. Remove bacon to a paper towel lined plate and drain all but 1 1/2 Tablespoons of grease.
01:17 Add onion and pepper and cook until softened, about 3-5 minutes.
01:33 Add garlic and cook until fragrant (about 30 seconds).
01:45 Add beef, breaking apart with a spatula as you cook. Once meat is partially (about 50%) browned, add sugar and all spices (chili powders, paprika, cumin, onion powder, black pepper, salt, cayenne pepper) and stir well.
02:52 Add all remaining ingredients -- beef broth, beans, tomatoes, tomato paste, chilis, and Worcestershire sauce -- and your cooked bacon and stir well.
03:33 Bring to a boil and cook 1-2 minutes, stirring frequently.
03:45 Reduce heat and simmer, uncovered, stirring occasionally. Simmer for 30 minutes to allow flavor to really develop.
04:05 Serve with preferred toppings (sour cream, shredded cheddar cheese, and corn chips are a must!)
Notes
For best flavor, DO NOT OMIT THE BACON. However, as someone who spent 23 years not eating bacon I wanted to include tips for those of you who might have the same restrictions. if you wish to make this recipe without bacon you *can do so by skipping the first step, heating 1 1/2 Tablespoons of oil over medium heat, and then beginning from step 2. On the other hand, if you want additional bacon for garnishing, cook it now and reserve.
**You can substitute one chili powder for the other and use just traditional chili powder or just ancho chili powder, but I personally like the blend of the two.
*** This gives the chili a mild spice, if you like more heat increase to 1/4 teaspoon for a moderate spice. Add additional cayenne pepper at your own risk!

I've made this twice now and it is definitely the best chili I've ever tasted. Its easy to modify depending on what I have on hand and the first time I made it I used whatever beans I had in the pantry including chickpeas. I leave out the green chilis because I'm not a fan, but the level of heat and intensity of flavour is amazing. It has now become a go to recipe and I've already shared it with friends.

I made it too but added an additional pound of ground turkey and doubled all the other ingredients with a can of yellow corn too. Its one of the best things ive ever made. I got 5 solid meals all for less than $10.

I made this last night, and it was extremely good. I did have to make a couple modifications due to my current refrigerator contents. I used about 1.5# of beef stew meat and 1.3# of coarsely ground beef, far more than the recipe specifies. And I added 1/2 of a green pepper in addition to the red bell pepper in the recipe as well as an additional 1/2 of a white onion. And I used some roasted Hatch green chiles that I had recently thawed. Again, this is what I had on hand and had to use before it spoiled. But overall the result was great. I've never used ancho chili powder or black beans in my chili before, and they definitely add a unique flavor twist.

Made this tonight. Followed the recipe to the letter with the exception of I used a home-made beef broth. Outstanding chili. Very very good. I topped with lots of Fritos, green onions, and chopped pickled jalapenos & carrots. No sour cream. Didn't need it because the heat is just right, and savory. The bacon and Worcestershire sauce work really well. Very well done!

I’ve never been a fan of chili. I’m very strict about the chili I eat. And because I know all of your recipes are award winning (at least to me) I made this today. And it was SOOOO DELICIOUS. This is the only chili I would eat. I going to make it again for the weekend because me and my family loved it so much we ate it for lunch and dinner.

I made this to take to my daughter & son-in-law's house. She is in recovery from a surgey and a friend of hers set up a "food train" where someone different delivers a meal-a-day for the first week after her surgery. By the time it was my turn, they had already accumulated a ton of leftovers, so I told her I would bring some chili in freeezable containers for later. So the plan was that we were not going to eat the chili when I visited, we would eat the leftovers. But once they sampled it, everyone loved it so much that's what we ate, and everyone demanded the recipe. So....kudos!!

That's like the perfect chili recipe. Simple, but covers all the bases. I might go a little heavier with the heat and spices, but as is; that is nice. Also appreciate the addition of Brown Sugar! I tend to add some for that fraction of sweetness that combats the bitterness of some chili spices. Good job!

I have made chili so many times in my life and wanted a new take on chili. I am definitely trying this recipe today in my slow cooker. My husband does not tolerate spice well so may have to adjust to his level of heat. This looks absolutely yummy. I have several of your recipes on my go to list. I just made this chili today and it is delicious, just added a bit more cayenne pepper (1/2 teaspoon more) since I wanted a bit more heat to it and substituted diced jalapeno peppers instead of the fire roasted chilis. A must try for anyone looking for a great chili recipe.

Love the recipe. I won the office chili cook-off with it. The only alteration I made was to double batch it and then use one pound of hamburger and one pound of breakfast sausage. It was won hands down!

Great video and recipe. I used top ramen packet mixed with water and diced my own tomatoes because I didn’t have time to go out and buy that stuff. My husband tried it and LOOOVED it. Although he did say “Don’t be offended but this reminds me of the chili I got in San Quentin. It’s good.” 🤣🤣🤦🏼♀️🤷🏼♀️

Hi Sam! I had to tell you that my husband has won 2 annual chili cook-offs with your recipe. This last Sunday he won the second, and I told him, you gotta give Sam her props!!
Last December was the first time he made it and when I tried it, I told him: you're gonna win. It was the best chili I'd ever tasted! And I was right! He won...out of like 25 chilis!!!
This year he made 7 lbs of chili, and let me tell you, that pot was scraped dry, lol!!!
Also, in between the cook-offs, my hubby has made it a few times for smaller gatherings for friends who were coming in from out of state and they all raved about it!
So, thank you for sharing your most delicious recipe!!! We, in turn, have shared it with so many others!

Mine is extremely similar to this, but I also add light kidney beans, a bit more brown sugar, a small can of crushed pineapple with the juices, 1-2 tbsp of lemon or lime juice and about 1 tbsp of fish sauce and teriyaki marinade to really get that umami flavor. I usually get weird looks when I say I added brown sugar and pineapple, but everyone loves it when they taste it. I also do the corn starch slurry to thicken it up along with the beef broth and tomato paste. Well done!
I also usually make mine spicy, but many of my friends can't handle the spice so I have cut down on the Chipotle and jalapeños, but my next batch for myself I'll definitely be adding the Chipotle pepper and adobo!

Nice presentation, worth subscribing. Turns out that the recipe is remarkably close to my own, which has also won a few contests. I add a little black coffee and serve the beans separately as a condiment. Alternatively, Try spooning it over a tamale.
