It has been wonderful to watch you mature as people and a channel. The love and friendship bw you keeps us here through the years, thank you! Fully agreed. I love that the normals are in no way still normals, except in attitude. That bit of wonder and discovery in their attitude really encapsulates the heart of what makes Sorted so good. James and Ebbers' love of sharing their knowledge combined with Mike, Barry, and Jamie's wide-eyed approach to discovering food makes for high quality content.

To answer your question about cheese mold, the reason you can eat that mold and not the mold on your bread or yogurt is because the cheese is specifically kept in an environment where only a certain type of mold can grow. That mold, over thousands of years of trial and error, has been determined to be safe for human consumption and optimize the development of the cheese (much like how not all bacteria is bad bacteria, not all mold is bad mold). Your random homegrown green stuff that shows up on your loaf of bread or your cheese drawer uninvited has been introduced from foreign, unknown sources around your kitchen or in your fridge. You don’t know what it is and therefore you don’t know how your stomach will respond to it

I haven't seen anyone trying any Finnish cheeses yet. Our milk is really good quality, and cheese making has hundreds of years of tradition. Valio Aura blue cheese, koskenlaskija and leipäjuusto are maybe some of the more uniquely Finnish ones, but there is an association of cheese makers, you could maybe get more information from, or on Valio homepage. Aura is a staple in cheese boards and at christmas some people pair it with gingerbread! Leipäjuusto is paired with cloudberries or cloudberry jam eaten as dessert... Koskenlaskija is used making soups more flavorful like lentil-carrot soup or salmon soup. Some smoked cheeses are really tasty too!
Celitic languages also have the kn but spelled Cn in Irish e.g. the pilgrimage site Cnoc / Knock. Also Norse e.g. King Cnut. The k sound in Knife was dropped in English but used to exist.

Watching them deal with the "Old Blue Brain" cheese reminded me of the excellent stinky cheese scene in the film Mordecai (2015). Watching the faces of Paul Bettany, Johnny Depp & Ewan McGreggor cracks me up every time. I've an extra under counter fridge that is just for cheese & bottles. A couple of years back I forgot about a particularly ripe, runny & reeking cheese & went on holiday. As Steve1989MRE would say, when I opened the door of it on my return there was a "...nice hiss." Lordy! It had escaped its wrapping & box, making a break for the border. I did however eat it; even though it would have been a war crime to feed to anyone else. Did take a lot of crackers & the best part of a bottle of port to convince myself I was having a good time though. Also took a lot of boxes of baking soda to make the fridge usable again. Excellent video & nice to see Mike not only be so game about eating cheese, but his taste buds maturing towards becoming a true turophile (connoisseur of cheese). 🧀

Belper Knolle (hard "k" and hard "n") is delicious and is from Belp, where the small Berne airport is. Knolle means "bulb" and its a cheese that is often grated over risotto or pasta in restaurants, like a truffle.

Josh, Ollie and Henry (Ollie's dad) tried cheeses together a while back, and the blue brain was among the ones they tried, so that's the only one I knew 😅 They forgot to refrigerate theirs though, so Mike would have had an even worse time with that one 😂

I had surgery on my stomach not long ago & because you fantastic bunch of guys always get me into stitches of laughter eveytime i watch one of your shows, I thought I would leave all of your prior ones I haven't watched whilst recovering & just binge watch them all at once, when my stomach wasn't so sore & tender & my internal stitches were disolved properly 😂😂 Well guys, I don't think I waited long enough 😂😂 I have laughed so much & so hard & I've only so far caught up on 3 shows 😂😂 my stomach is now in knots & pain from laughing so much & I'm using a pillow on my tummy to help press down when I laugh, to help with the soreness. I just can't stop watching now I have started. You guys are just brilliant & even though I'm sore, you have all made my day. First time I've laughed & smiled so much in 4 weeks. One of my favorite cheese is “alp blossom cheese” The cows eat the flowers on the mountain, flowering the milk, and then they press flowers onto the cheese before aging. Super flavorful

I honestly sat a moment to think how to teach them the word "Knolle". I can't. Watch some German potato farmer vids, it's often used as nickname for potatoes. And "Knöllchen" (little knob) is slang for a speeding or parking ticket, "Knolle" can be used for a quite expensive one.
Please do this as a series - would love to see Mike educated in cheese, and all the normals do a similar journey with something they don't understand or want to learn more about, etc.
You have to try the “Tête de Moine” Cheese from Switzerland. Properly cut into rosettes, which is interessting by itself. It is very popular here in Switzerland.
After witnessing the guys' great shot at German they should try the German "Würchwitzer Milbenkäse" next (if only for their attempts at pronouncing it) It's a cheese with over 500 years of tradition in an area in the eastern part of Germany and is aged in "Milben" - that's German for mites ;)

@@SortedFood Wisconsin and Michigan would be a fun road trip for you all to film. between the cheese and the beer they are pretty outstanding states for the Mid-West. start in Michigan, cross the Mackinac Bridge, cross through the upper peninsula into Wisconsin and then you can fly out of Chicago

I honestly sat a moment to think how to teach them the word "Knolle". I can't.
Watch some German potato farmer vids, it's often used as nickname for potatoes. And "Knöllchen" (little knob) is slang for a speeding or parking ticket, "Knolle" can be used for a quite expensive one.

You have to try the “Tête de Moine” Cheese from Switzerland. Properly cut into rosettes, which is interessting by itself. It is very popular here in Switzerland.
After witnessing the guys' great shot at German they should try the German "Würchwitzer Milbenkäse" next (if only for their attempts at pronouncing it)
It's a cheese with over 500 years of tradition in an area in the eastern part of Germany and is aged in "Milben" - that's German for mites ;)
